Post 11km run refuel! I am obsessed with Rhubarb at the moment 🤗this is a delicious low calorie rhubarb crumble with a high protein natural yoghurt topped with a super berry and nut mix! Around 200-220 calories per serve. Have to share the recipe for you to enjoy too! 1 bunch of rhubarb cut into small pieces ~ 400g frozen or fresh strawberries ~ 3tbsp brown sugar or 1 banana ~ 1tbsp fresh orange juice Oat crumble topping 200g rolled oats ~ 2tbsp coconut oil ~ 1 tbsp brown sugar ~ 1tsp cinnamon ~ pinch of salt Method preheat oven at 200, Place rhubarb and strawberries into a small baking dish, add the sugar or banana and the orange juice mix together. Place in oven for 20-30mins until fruit has started to soften but not mushy. In a medium size bowl place oats, cinnamon, sugar, coconut oil and salt mix together with your fingers until small clumps form. Add the oat crumble over the cooked fruit and bake for a further 20-25mins until the topping is golden and the fruit filling starts to bubble at the side! Rest for 10mins serve with yoghurt nuts and seeds! Enjoy 😊

I have been doing intermittent fasting since Aug 2020, my results and energy levels have doubled! Last night I made a buckwheat/oats, orange & cinnamon bircher to break my fast at 11am. Topped with natural yoghurt, berries, sunflowers seeds and almonds. Comment below@if you would like the recipe.
