Whiz together, pour into moulds and freeze!

Having food allergies has meant that we are always experimenting when it comes to recipes and creating safe alternatives. These are a winner in our house and perfect on hot days! ☺️

Today I delivered 21 donated books to Queensland Children’s Hospital through the beautiful Expand Your Library Ally Lab! 🤩

Thank you to all the wonderful people who donated a book! We had 16 in total, plus the extra 5 donated myself. 🥰

I’m thrilled to have donated to this fantastic initiative!

I’ve been making this jelly for years, it’s super easy and my kids always love it. 🍊🍋🫚🍯
The more gelatin you add, the more firm it will be. Sometimes I’ll pour it into cute moulds and make gummies, but when I’m short on time, just pour it all into a glass container, refrigerate and cut into pieces like this! 👌🏻

I’ve been pretty sick over the past week, so have just made a fresh batch with mandarins from our tree! 🧡

I guess all the measurements 😅 but you can follow the instructions on the gelatin bag. I juice the citrus, add honey, a little grated ginger and/or tumeric (or just use dried powder if you don’t have fresh).

This is my why. I’ve had some beautiful mums reach out to me recently to share how much their children love my book and how it’s helped them.

When days are hard, these messages remind me why I am doing this.
