MUSTARD GREENS or G*i choy (Brassica juncea)
An easy, nutritious green to grow - I have this in my garden with my silverbeet. It is easier to grow (for me) than bok choy, because the slugs don't like the mustard greens as much!
Health wise it has these benefits:
* Supports digestion and binds to bile acid - to help to reduce cholesterol
* Contains a bitter sulphur compound (glucosinolate) that protect DNA and supports liver phase II detoxification
* High in antioxidants (isothiocyanates) and is a cruciferous veg (same family as broccoli) so also good for the gut microbiome and gut barrier. It also aids oestrogen detoxification - as it contains glucosinolates that break down into Indole-3-Carbinol (I3C) and Diindolylmethane (DIM)
* Also contains anti-microbial qualities
I use mine in omelettes, dahl, stir fries and sautéed greens with garlic.
