NOURISH YOUR BODY | CHICKEN + VEGETABLE SOUP 🍗🌿
As we move through the final days of winter here in Perth, I’m reminded that some of the simplest forms of nourishment can be some of the most comforting.
And honestly, is there ever a bad time for a beautiful pot of homemade soup? 🥣
I’ve been noticing so many families and people within our community dealing with winter bugs lately. The common cold, influenza and RSV are certainly making their way through schools, workplaces and households.
So while food isn’t medicine in the sense of treating or preventing a virus, nutrition is one of the core foundations of caring for our bodies and minds.
When our bodies are working hard to keep us well, recover from illness, manage stress and simply get through the demands of everyday life, giving them nourishing foods, adequate fluids and quality nutrition is a beautiful place to start.
🌿 My Chicken + Vegetable Soup / Broth🌿
A whole chicken slowly simmered with:
🥕 Carrots
🌱 Celery + celery leaves
🥒 Zucchini
🧅 Brown onion
🫒 Extra virgin olive oil
🫚 Fresh ginger
🌿 Garlic + bay leaf
✨ Turmeric
🍎 A splash of apple cider vinegar
💧 Plenty of water
🍗 And, of course, nourishing chicken
Slow cooking allows the chicken and vegetables to create a beautifully rich, warming broth that can be enjoyed as a chunky chicken and vegetable soup or strained and sipped as a nourishing broth.
Why I love this combination so much;
🍗 Chicken provides protein to support the body’s everyday repair and maintenance.
🌿 Vegetables contribute vitamins and minerals and when enjoyed as part of the soup rather than strained out there’s valuable dietary fibre.
🫚 Ginger, garlic and turmeric bring not just flavour and a beautiful array of plant compounds to the pot they offer anti inflammatory properties.
💧 The broth also contributes fluids, which are an important part of staying hydrated.
🌱 And nourishing the gut matters too. A healthy gut is supported by a varied diet rich in plant foods and fibre which is one reason I love keeping plenty of those vegetables in my bowl.
This isn’t about “boosting” or fixing the immune system overnight. It’s about consistently giving your body the nourishment it needs to do what it naturally does best with Food nourishment, Hydration, Rest, Movement when your body is ready. Plus Sleep and Connection to listening to what your body is asking for that is nourishment. 🫶🏽
And although spring is just around the corner here in WA, I’ll happily keep a pot of soup simmering for a little while longer. It’s always my go too. Because soups are never really out of season. 🌿🥣
✨ Save this recipe for your next slow Sunday cook up or when someone in your family needs a little extra nourishment.
As always, this recipe is for nourishment and general wellbeing and isn’t intended to diagnose, treat or prevent illness. If you or someone in your household is unwell, seek appropriate medical advice.
Happy last days of winter Darling’s ❄️ 💕
