Apple & Pear Crumble ❄️
A high fiber, warm breakfast for the winter time.

Fruit base:

• 800g pear and apple, chopped
• cinnamon, to taste
• nutmeg, to taste

Topping:

•120g oats
•55g cashews, roughly chopped
•40g brazil nuts, roughly chopped
• 70g brown flaxseed meal
• 30g butter, melted
• 1 flat tbsp brown sugar

Method:

1. Preheat oven to 160°C. Place pear and apple into a baking dish and sprinkle with cinnamon and nutmeg.
2. Fill the baking pan about one-third full with water (around the fruit, not over it), then cover tightly with tin foil.
3. Bake at 160°C, covered, for 25 minutes.
4. While the fruit bakes, mix oats, cashews, brazil nuts, and flaxseed meal in a bowl. Stir through the melted butter and brown sugar until well combined.
5. Remove the foil, scatter the oat topping evenly over the fruit, and return to the oven uncovered for 15 minutes, until golden.

Reheats well and serve with a Greek yoghurt. I loved chopped kiwi fruit on top.

If I was making a herbal blend for the season of winter ❄️

•Echinacea- first line of defence when something’s going around
•Mushroom Blend-deep immune intelligence, building resilience from the inside out
•Ginger-warmth and circulation when the cold settles
•Elderberry- antiviral support and a gentle shield through the season
• Waratah flower essence – for courage and renewal in the depths of winter

Warming, protective and built for the long haul.

First day of winter, and this is what’s brewing in the dispensary.
•Echinacea - the king of immune defence, and an underrated adaptogen
•Marshmallow root - soothing on sore throats and long days consulting
•Hibiscus - vitamin C rich, and it turns the whole blend a deep ruby
•Lemon balm - antiviral and anxiolytic. No thyroid clients today, so in it goes.

St Mary’s thistle- for liver support and winding the body down.
Mullein- to help combat the dryness and nourish the lungs & airways
Elderberry- Gentle immune support introduction as the weather gets colder
Crowea flower essences- nervous system ease and rebalancing.
Autumn leaves essence flower essences- for surrender & letting go.

Slowing, grounding and deeply nourishing.

The skin is the last organ to receive nutrients and often the first to show when something has shifted.

Jawline breakouts, persistent dullness, dryness that no moisturiser touches, these are the body’s way of pointing somewhere deeper.

Swipe through for five common presentations I see in clinic, and what I look for behind each one.
