What’s for tea/dinner at your place tonight?

I’m making rustic shepherds pie. It’s one of my favourites 🤩.

Joy of having two Thermies - making a double batch. I’ll make one large batch and split some into smaller servings to give to my Dad.

Anyone else batch cook?

Mini minced beef pies with steamed vegetables.

I made the shortcrust pastry - so simple to make your own, although I still need practice with rolling it out 🤣

Flavours in these pies is 🤩.

I cooked in the pie maker.

Would be easy to serve with whatever veggies you liked - even some mashed potatoes!!

I’m a little old school and love doing one on one deliveries with my customers. Answering their questions, sharing tips and learning things together.

Today was extra enjoyable - what’s not to love about these wonderful views - from the crops to the ocean, so magical 🥰

Yum!!

Awhile back I ordered latest book on soups. Finally got organised to make a recipe from it and if all the recipes are as good as this one I’ll be a happy camper 🥰.

Creamy vegetable soup - so tasty and perfect for these cold nights and when Master 11 is complaining of a sore throat 🤒

Of course had to make a Portuguese loaf to go with it!

Love being able to make the basics in Thermie!

Run out of brown sugar - no problems, have it made in 5 minutes from two ingredients!

Was needing some snacks for school lunchboxes and was also craving a chocolate chip cookie 😋.

Remembered one I used to make BT (before Thermie 🤣- going back awhile now!) that used to have oats in it and I loved. So tracked down my old recipe book, with all my hand written recipes in it and converted it.

Was as delicious as I remembered - shared a couple with my beautiful Dad for afternoon tea today.

I love trying new recipes! This one had been on my radar for a few years 🤣 and eventually got around to making it tonight. So tasty! I baked extra veggies with it (zucchini & broccoli). It said to serve with your favourite sauce - but we had it plain. So much flavour within it, didn’t need anything else!

Have you made it or would you make it? Love to hear your thoughts!

What’s for dinner at your place tonight?

Second night running we’ve had these beef and bean enchiladas. Last night Master 11 found them “too spicy” - even though I reduced the chilli a lot!!

Tonight we stopped off at the supermarket on the way home and grabbed some sour cream - he enjoyed them more tonight!!

First time making this recipe, normally I make the chicken ones. Both are great.

Any other favourite enchilada recipes out there?
