If cauliflower isn’t usually your thing… try it like this 😮💨
Roasting it until the edges get properly golden and crispy makes such a difference, especially with this creamy garlic tahini sauce over the top!

Roasted cauliflower + garlic tahini 👉🏻
For the cauliflower:
* 1 large cauliflower, cut into florets
* 2 tbsp olive oil
* 1 tsp cumin
* ½ tsp smoked paprika
* Salt + pepper
For the tahini sauce:
* ¼ cup tahini
* 1 garlic clove, finely grated
* Juice of 1 lemon
* ½ tsp maple syrup
* Pinch of salt
* 2–4 tbsp warm water
How to make:
Preheat your oven to 220°C.
Toss the cauliflower with olive oil, cumin, paprika, salt and pepper, then spread it over a baking tray. Roast for 25–30 minutes, turning halfway, until the edges are golden and crispy.
For the sauce, whisk together the tahini, garlic, lemon, maple syrup and salt. Slowly add warm water until you get a smooth, drizzle-able consistency.
Spoon the sauce over the cauliflower and finish with fresh parsley, sesame seeds and chilli flakes if you like a little heat.
I’d have this alongside some crispy chickpeas or served as a side, even tucked into a warm wrap for an easy lunch option ✨
