IDont eat cakes or biscuits but I make a lot of almond bread. Savoury and sweet. This is my chocolate version.
1.5-2 cups blend of almond meal and hazelnut meal with pure cocoa no sugar. I use pure monk fruit powder (1/4 teaspoon) don’t use any other sweetener if possible. Erythritol is inflammatory and the monk fruit you buy at supermarkets is 99% erythritol 1% monk fruit.
I use two eggs and a dash of water to bind. I added two squares of very dark Belgian choc in bits on the top.
Then cook in over or air fryer. I cook mine in a slow cooker line lid with baking paper for about 1.5-2 hours. Is moist and pudding like then.
This will be full of nutrients and minimal carbs. The right carbs from nuts but protein too. Zinc, calcium, selenium etc.
I cut into tiny slivers and freeze. Taking a piece out to warm up then add natural unsweetened coconut yoghurt. Nice as a treat.

Tonights dinner. Threw some things together. Coconut cream and coconut milk, coriander, ground cumin, turmeric, ginger, cracked pepper, sea salt, firm tofu, cherry tomatoes, spring onions, capsicum and towards the end some bean shoots. Yummy. It was awesome. Cooked in slow cooker on high for 2.5 hours.

Dinner was relatively healthy. Mediterranean salmon and asparagus done in the air fryer with cherry tomatoes squeeze of lemon olive oil sea salt and pepper. The ham was to treat my cat Lubs who seems to think I should share.
The desert was strawberries, coconut yoghurt and really dark chocolate.
I love how simple yet healthy and lush this is.
