Our vegetable of the month is Mushrooms! 🍄🟫
Mushrooms are a nutrient powerhouse that offer potent antioxidants, immune-boosting beta-glucans, and are one of the few natural dietary sources of vitamin D. They're also high in fibre and potassium, making them a great choice for a balanced diet.
A great way to incorporate mushrooms into your diet during winter is a mushroom broth.
Ingredients:
- 500g fresh mushrooms
- 1 medium yellow onion
- 1 medium carrot
- 2 cloves garlic
- 2 litres cold water
- 1 tsp whole black peppercorns
- 1 bay leaf
- 3-4 sprigs fresh thyme
Method:
1. Place all ingredients into a large stockpot or Dutch oven.
2. Bring the liquid to a rolling boil over medium-high heat. Once boiling, immediately reduce the heat to your lowest setting, partially cover the pot, and let it simmer for 45 to 60 minutes.
3. Remove the pot from the heat. Place a fine-mesh sieve over a large heatproof bowl or another pot, and strain the broth, pressing gently on the mushrooms and vegetables to extract the liquid.
4. Taste the broth and stir in a pinch or two of salt if needed.
5. Let the broth cool completely, then store in an airtight container in the fridge for up to 4 days, or freeze it for up to 2 months.
