BlackBerry & Yoghurt Baked Oats
Gluten-free & dairy-free
Ingredients
* 2 cups rolled GF oats
* 1 tsp baking powder
* 1 tsp cinnamon (optional)
* Pinch of salt
* 3 eggs
* 1 cup dairy-free yoghurt (coconut yoghurt works beautifully)
* 1 cup dairy-free milk
* 2 tbsp maple syrup or honey
* 1 tsp vanilla
* 1 cup blackberries (fresh, frozen/other berry)
Method
1. Heat oven to 180°C fan-forced (or 190°C conventional).
2. Mix oats, baking powder, cinnamon and salt.
3. In another bowl whisk eggs, yoghurt, milk, maple syrup and vanilla.
4. Combine wet and dry ingredients.
5. Fold through most of the blueberries.
6. Pour into a greased baking dish (about 20cm square).
7. Bake for 30–35 minutes until set and lightly golden.
Optional squirrel upgrades 🐿️
* Add dollops more yoghurt on top, more berries and drizzle with honey before baking as pictured.
* Add 1 mashed banana.
* Add a scoop of vanilla protein powder (reduce oats slightly if the mixture gets thick).
* Sprinkle chopped almonds or walnuts on top.
* Add lemon zest for a muffin vibe.
Serve hot or cold.
Keeps in the fridge for 4–5 days.
Perfect for meal prep, breakfast or an afternoon snack.
