Coming with you with a very easy weeknight dinner! Like a lot of households, the question I ask myself every week is “what am I going to do with those chicken thighs?”

When I’m looking for something really easy that I know with any sides I’m making this is my go to! It’s delicious, versatile, and makes for the most delicious lunches the next day!

If you’re a parent of a teen, this is a great one to make a bit extra of, so you have something to add to a wrap or roll the next day.

You will need:
6 chicken thighs
3 cloves garlic, peeled and crushed
Zest and juice of 1 lemon
1 tbsp Italian seasoning
Pinch of chilli flakes, optional
3 tbsp olive oil
Salt

1. In a large bowl, add in your chicken thighs along with the garlic, lemon zest and juice, Italian seasoning, chilli flakes, olive oil and a sprinkle of salt.
2. Use your hand to make sure every piece is coated in all the herbs.
3. Cover the bowl and pop it in the fridge to marinate for a few hours or overnight (you can totally skip this if you’re short on time!!).
4. Pop all the thighs on a non-stick baking tray in a single layer and cook for 35 minutes in a 180C oven. Be sure to flip the chicken halfway through. You can also cook this on the BBQ (that’s when it tastes the best).

Be sure to save this one!! 🍋

Growing up, I absolutely loved a buffet.

Christmas at my nonna’s house meant a bench and table covered in food, and the hardest decision of the day was how to fit it all on one plate.

Birthdays meant the dessert table. Birthday cake, my zio’s famous carrot cake, my nonna’s biscuits, whatever looked good. I ate with joy and no guilt.

Then one day it was like a switch was flicked.

A relative said “I wish I could eat as much as you, mine goes all to my thighs.” Up until that point, I hadn’t thought of food as something that impacted body size. It was simply energy and a way of celebrating with the people I loved.

After that, the buffet became a negotiation.
“What if they don’t have something I like?”
“Maybe I should eat before I go.”
“If I have mostly x then I’ll only need to walk for x minutes tomorrow.”

It makes me sad that I spent so many years not tuning into what I actually wanted.

Over the weekend I had four buffets. The version of myself during my disordered eating days would have pulled out of at least one of those events. I don’t know if she could have managed the uncertainty. I have so much love and compassion for that version of myself. It wasn’t her fault. She was fed so many messages about health, wellness and beauty standards. These messages almost always put appearance above connection.

I’ve given myself permission again to enjoy the foods I love.

Food freedom looks different for everyone. But if you’re somewhere in the middle of that journey, I’d invite you to sit with this question:

What might food freedom give back to you?

Maybe it’s a birthday table you stay for. Maybe it’s a Christmas at someone’s nonna’s house where the food is the least complicated thing in the room 🧡

Mamma Mia is such a celebration of love no matter what age you are, and we both adore that element of the film.

The question that it did leave us pondering was around aging, do women fear getting old or looking old?

Considering we live in a world where the anti-aging industry is worth millions of dollars, it’s probably the latter. But why?

Why is aging seen to be such a bad thing by so many? Why do so many people avoid it? Is the pressure to ‘age gracefully’ just has harmful as the message to maintain our youth?

We talk about it all on this weeks episode of the podcast, comment AGING and we’ll send you the link to listen 🎧

Yesterday we said goodbye to a very precious member of our family and the star of weekend recaps 🐱

Allie girl you were truly special. I remember when I moved to the coast when I was 27. I had no friends and you came and lived with me. Together we build a very special life. Then, one day, you met Max. You didn’t like long to warm to his caring nature. Watching him fall for you is a gift I’ll forever treasure.

Our house is quiet without you, but your playful spirit is imprinted on all of our hearts.

Thank you for everything 🤍
