My favourite winter dish, a tasty vegetable claypot aka ratatouille smells absolutely delicious!
😋 💃🏻❤️‍🔥🍆🍅🫑🌶🍲❤️🔥

I put the oven on high, sautéed some leek, aubergine, capsicums and zucchini in a little olive oil. Add crushed garlic, some tomatoes and about a cup of vegetable stock. Season to taste with oregano, marjoram, sea salt and lots of cracked black pepper before transferring to the oven in a covered dish for about half an hour hourglass ⏳
This is where the magic happens 🪄🥰 the juices mingle to create a light, warming yet slightly astringent one pot meal perfect for stoking digestive fire and melting the frozen river of kapha dosha ❄️👌

I added a little goat’s cheese as a special treat for myself, and soaked up the juices with some fresh wholemeal bread 🐐 🍞😉👌
