It really is THAT simple to make a cheese soufflé! 🧀 👇🏻

Ingredients for 2:
- 23g butter, plus extra for greasing
- 23g plain flour
- 190mL milk
- 53g grated Gruyère cheese (or tasty/cheddar)
- 23g grated Parmesan cheese, plus extra for preparing the ramekins
- 3 eggs, separated
- Pinch salt
- Black pepper, to taste

Pre-heat the oven at 170C fan-forced and prepare the ramekins by brushing butter all over, ensuring in an upwards direction around the sides, then sprinkle over some Parmesan.

Make the roux with butter and flour, then add milk and whisk until thick; remove from heat. Mix in the grated cheeses, followed by egg yolks.

Whisk the egg whites until stiff peaks then fold into the mix.

Pour into ramekins and bake for 20-25 mins. Serve immediately.

Friday night dessert just got serious. Recipe below for 2 👇🏻

* 100 g dark chocolate
* 75 g butter
* 3 eggs
* 1 egg yolk
* 50 g rapadura sugar
* 1 tsp vanilla
* 10 g plain flour
* 10 g wholemeal flour
* Pinch of salt
* Butter for greasing
* Cocoa powder for dusting ramekins
* Icing sugar to serve
* Cream to serve
(Or for extra indulgence, use 2 eggs + 2 egg yolks)

Prepare ramekins: brush upwards with butter, dust with cocoa, pour out excess.
Melt the butter and chocolate together.
Whisk in remaining ingredients.
Refrigerate 1-6hrs.
Bake at 180C fan-forced for 14-18 mins, until the edges are hard, but the centre still wobbles.

- 2tbsp honey
- 1 egg
- 50g butter, melted
- 300g plain flour
- 100g wholemeal flour
- 1/2tsp salt

Cinnamon filling:
- 50g butter, softened
- 1/3 cup brown sugar
- 1.5tbsp ground cinnamon
- Pinch salt

Icing:
- 100g cream cheese, softened
- 20g butter, softened
- 40g icing sugar
- 1tsp pure maple syrup
- 1/2tsp vanilla

*Make dough. Knead 6-10mins. Proof approx 1-1.5hrs, until doubled in size.
Roll out into a square, spread butter from filling ingredients, then sprinkle over remaining filling ingredients.
Roll, slice into scrolls (makes 12-16 depending on size). Proof another 30-45mins.
Bake 160C fan-forced for approx 22mins.
Mix icing ingredients together while baking then spread over the top while still warm.

Greek feta filo pie. 🇬🇷 Seriously cannot wait to make (and eat) this again! So simple too! 👇🏻

- 10-12 filo sheets
- 200g feta, crumbled
- 3 eggs
- 250mL milk
- 60mL olive oil
- Salt/pepper/ground garlic/ground onion
- Optional: chopped spinach, black sesame seeds to top

Greek yoghurt bagels to go with my Greek yoghurt “cream cheese” the other day.

Delicious! But tbh, I also couldn’t tell any difference between this and a normal bagel recipe. (Aside from it being higher protein I guess?)

Ingredients for 2:
* 150 g bread flour
* 50 g wholemeal flour (optional; otherwise use 200 g bread flour total)
* 3.5 g instant yeast
* ½ tsp salt
* 1½ tsp honey
* 90 g Greek yoghurt
* 60–70 ml warm water

Boil 60 seconds each side in boiling water + baking soda mix.
Egg wash + add optional seasonings.
Bake at 200C for approx 18-22mins.

Had 1 week to use a whole large tub of Greek yoghurt. One thing I made was this “cream cheese” - just mixed a little salt into it, strained over a bowl in a cloth overnight in the fridge. I think I used approx 200g yoghurt for this from memory.

Supposedly higher protein, less fat and less calories…? 🤷🏻‍♀️
Definitely yum!!

Got bored with the same old meals the other week and decided to make a beef & mushroom pie. Turns out, I accidentally made one of my husband’s new favourite dinners!

Suuuper simple & quick. 👇🏻
Just sauté some onion/garlic/mushrooms/carrot (+ salt and pepper of course). Add beef mince & brown.
Add dried rosemary, beef stock and corn flour slurry (to thicken), cook down.
Layer with puff pastry (top tip: throw an extra surprise layer of pastry in the middle! 😱😍), brush with egg and bake at 200C for approx 40mins.

Optional: Add lentils in while making the filling. (I loved this, my husband not so much. 😆)
