Ingredients

FOR THE CHICKEN

1 kg chicken thighs, boneless and skinless
⅓ cup coconut aminos
2 tsp avocado oil , plus extra for cooking the chicken
Juice half a lime
2 tbsp honey
1 clove garlic, grated
1 tsp ginger, grated
salt and pepper

FOR THE BROTH

2 tsp sesame oil, see notes and sub avocado oil
2 tsp ginger, grated
1 clove garlic, grated
1 tbsp coconut aminos
2 cups chicken bone broth
Juice of half a lime
Salt and pepper

FOR THE VEGETABLES

1 tbsp coconut aminos
1 bunch broccolini, trimmed
1 medium carrot, shredded
Salt and pepper

TO SERVE

2 cups cooked white rice
Green onion, chopped
Sesame oil

Instructions

To marinate the chicken thighs, use a medium bowl, add the chicken thighs along with the coconut aminos, avocado oil, honey, ginger, garlic, lime, and salt and pepper.

Transfer to the fridge an marinate for at least 30 minutes, and up to an hour.

To cook the broth
add the seasame oil to a pot set to low heat. Add the garlic and ginger and saute for 2 minutes.

Add the broth, lime juice, coconut aminos, and salt and pepper. Simmer covered on low heat for at least 30 minutes. The broth should be warm and flavorful!

To cook the chicken
using a large, deep pan, heat about 1 tbsp of avocado oil over medium heat.

Add the chicken and allow to cook for 3-4 minutes on each side, or until cooked through to 180. Set aside on a covered plate to keep warm.

To cook the vegetables
add 1 tbsp of coconut aminos to the pan and scrape the bottom with a wooden spoon to deglaze the pan.

Add the vegetables and saute for 4-5 minutes or until tender. Lightly season with salt and pepper and set aside with the chicken.

To serve, slice the chicken thighs into strips and place them in a bowl.

Add some of the vegetables, half a cup of rice, and a few large spoonfulls of the warm ginger broth. Top with green onion and a small drizzle of seasame oil.

Tangy tofu stir-fry:

Ingredients:
250gm rice noodles
450 gm firm tofu
1 tbsp olive oil
2 eggs whisked
Asian veggies of your choice (I use a mix of organic coloured cabbage & bean sprouts)

Sauce:
2 garlic cloves crushed
2 tbsp lime juice (plus lime to wedges serve)
3 tbsp Tamari
1 1/2 tbsp Tamarind paste
2 tbsp coconut sugar
Finely chopped peanuts to serve

Method:
• Cook rice noodles as per packet instructions.
• Heat olive oil in a wok and cook tofu for 5 mins or so
•Push tofu to side and add whisked egg then add veggies and cook for 5 more mins until softened
•Add sauce ingredients and cooked rice noodles for another few minutes.
•Serve with chopped peanuts & lime - you can add coriander, chilli etc too 🫶🏽

Creamy Kale, Sweet Potato & Chicken Salad

Time to cook: 35 minutes, Serves: 3

Ingredients:

1 sweet potato, cubed
400g (14.1oz) tin chickpeas, rinsed & drained
2 tbsp extra virgin olive oil
1 tbsp sweet paprika
1 tsp dried oregano
2-3 kale leaves, washed & torn into small pieces
1 tbsp lemon juice
¼ bunch parsley, finely chopped
300g shredded chicken (we used poached chicken)
For the dressing:

⅓ cup (80g) Greek yoghurt
1 tbsp wholegrain mustard
1 tbsp lemon juice
1 small garlic clove, minced
1 tbsp honey

Method:

Preheat the oven to 200ºC or 395ºF. Line a baking tray with baking paper. Pat the chickpeas dry with some paper towel.

Place the sweet potato on a tray along with the dried chickpeas. Drizzle the olive oil over the top along with the paprika, oregano and a good pinch of salt and pepper. Toss to coat. Bake in the preheated oven for 30 minutes or until golden brown.

Place the shredded kale leaves in a mixing bowl. Squeeze the juice of half a lemon over the top. Use your hands to massage the kale.

Whisk together the dressing and season to taste with sea salt and black pepper.

Add the cooked sweet potato, chickpeas, chopped parsley and shredded chicken to the bowl with the kale. Pour over the dressing and toss to coat.

500g salmon
Soy/tamari

Honey
(As much as you like)

2 cups jasmine rice
2.5 cups organic bone broth
2 Avocados
Edamame beans
Then top with sesame seeds
Chilli sauce
Cucumber
& any other toppings you wish

I love globe artichoke 🌿💚 It’s been my favourite herb for as long as I can remember.

Why? Because it’s incredibly gentle and safe.
