This lunch is packed with nutrients and is a great example of a high protein, high fibre meal that will keep you satisfied for hours.

🥣 What’s in the bowl?

🥗Satay tofu
🥗Chickpeas
🥗Carrot
🥗Cucumber
🥗Lettuce

Dressing: Balsamic Vinegar and EVO

🌱 Protein power
Between the tofu and chickpeas, you’re getting a generous dose of plant protein.

🌾 Fibre for gut health
Chickpeas are one of the stars here. They’re loaded with fibre, which feeds your healthy gut bacteria.

Combined with the vegetables, this meal easily delivers a substantial amount of your daily fibre needs.

🥕 Colour = antioxidants
The carrots provide beta-carotene, which your body converts into vitamin A for healthy vision, skin and immune function. They also contribute antioxidants that help protect your cells.

🥒 Hydration and crunch
Cucumber is mostly water, making it a great way to boost hydration while adding volume and crunch.

🧡 Healthy fats
The Extra Virgin Olive Oil and the satay marinade (typically containing peanuts) provides unsaturated fats, which support heart health and help absorb fat-soluble vitamins like vitamin A from the carrots

Overall, you’ve got a lunch that’s:

✅ High in fibre
✅ Rich in vitamins and minerals
✅ Full of slow release carbohydrates for steady energy

Today’s lunchboxes 🫶🏼 Emi to the left, Livvy to the right

I always aim for a mix of protein, fibre, healthy fats and colour. Not because every lunchbox has to be “perfect”, but because it gives them the best chance of staying full, focused and actually eating something while they’re at preschool.

Today’s lineup:
🥪 Avo sandwiches for quality fats and fibre, which help keep kids satisfied and support growing brains.
🥒 Cucumber + capsicum for crunch, hydration and vitamin C.
🍊 Orange for even more vitamin C to support immunity and help absorb iron from the rest of the meal.
🧀 Cheese stringers for calcium, protein and healthy fats to support growing bones and teeth.
🥨 Pretzels + crackers because lunchboxes don’t need to be all “health foods”. A familiar, fun food often helps the rest of the lunch get eaten too.
🥬 Seaweed for iodine, an important nutrient that supports thyroid function, growth and brain development. It’s also a fun, crunchy way to introduce different flavours and textures.
🍓 Ceres Organics Australia berry bar for a little extra fibre and wholegrains in morning tea.

One thing I’ve learnt over the years? You don’t have to fill every compartment with a “superfood”. A balanced lunchbox is made up of foods that nourish your child and foods they’ll actually eat. That’s a win in my books. 💛

Emi to the left, Livvy to the right. Today’s lunchboxes are one of those “real life” ones. A mix of fresh, convenient and foods I know my girls actually eat.

Today’s lineup:
🥯 Jesse’s Bakery - Jesse’s Cafe Mini bagel with avocado: A source of carbohydrates for energy and quality fats for skin, heart and brain health.
🥚 Boiled egg: one of my favourite lunchbox additions. It’s packed with high-quality protein to keep little tummies fuller for longer, plus choline, which is important for brain development (even if the yolk doesn’t get consumed 🙄)
🫒 Olives & pickles – I love exposing my kids to different flavours. They’re not huge sources of nutrition, but repeated exposure helps build familiarity with savoury, salty foods and can encourage more adventurous eating over time.
🫑 Capsicum: loaded with vitamin C, which supports immunity and also helps with iron absorption from other foods in the lunchbox.
🍈 Rockmelon: hydration plus vitamin C and vitamin A for healthy skin, eyes and immune function.
🍪 A mini KOJA - Healthy Snacks Bite: For fibre and energy

A reminder that every compartment doesn’t need to be a “superfood.” A balanced lunchbox is simply one that offers a variety of foods over the day. 💛

Lunchbox reality: balanced, practical, and full of foods my girls actually enjoy eating.

Today’s boxes include:

🥚 Boiled egg – one of my favourite lunchbox additions. Packed with high-quality protein plus choline, which is important for brain development and memory.

🥒 Cucumber + pickles – hydration, crunch, and a low-pressure way to keep vegetables familiar.

🫑 Capsicum – loaded with vitamin C, which supports the immune system and also helps absorb iron from the rest of the meal.

🍚 Brown rice – slow-release carbohydrates and fibre to keep hers fuelled.

🥟 An avo pita – the main source of energy and quality fats.

🌰 Pepitas + a few chocolate chips – healthy fats, magnesium, iron and zinc from the pepitas, with a sprinkle of chocolate because… life.

🌴 Date – a naturally sweet source of fibre and potassium.

🥛 Tamar Valley Dairy yoghurt pouch – an easy way to add extra protein and calcium for growing bones.

One thing I always aim for is a mix of protein + fibre + healthy fats + carbohydrates. That combination helps keep kids fuller for longer, supports steady energy levels, and gives them the fuel they need to learn, play and grow.

Lunchboxes don’t need to be fancy. They just need to be good enough most of the time. 💕

My Signature Veggie-Loaded Bolognese 🍝🥕🌱

If there’s one recipe I make on repeat, it’s this one. It freezes well, the 1 kid (Emi) happily eats it, and it’s an easy way to pack in a whole lot of nutrition without making separate meals.

✨ Why these ingredients made the cut:

🧄 Garlic adds flavour plus contains beneficial plant compounds.

🥕 Carrots are a great source of beta-carotene, which our bodies convert to vitamin A for healthy eyes, skin and immunity.

🥒 Zucchini sneaks in extra fibre and vitamin C without overpowering the flavour.

🥩 Extra lean beef mince is packed with high quality protein, iron, zinc and vitamin B12 to support growth, energy and brain development.

🍅 Tomato paste + Mutti Napolitana + diced tomatoes are naturally rich in lycopene, an antioxidant that’s even more available once cooked.

🫘 Lentils are my favourite addition. They boost fibre, plant protein and iron, help stretch the mince further, and make this meal much more budget-friendly.

🌿 Mixed herbs are an easy way to add extra flavour so you don’t need to rely on heaps of salt.

I always say you don’t need to serve vegetables in perfect little sticks to nourish your kids. Sometimes they end up blended into a big pot of bolognese.
