Cozy Tasmanian Apple Cider Pork 🍎✨🥘
•2.5 kgs of pork shoulder roast
•2 tablespoons olive oil oil
•2 cups fresh apple cider - I used
•2 cups chicken stock or broth - I used
•2 tablespoons dijon mustard
•3-4 cloves of garlic minced
•3 rosemary sprigs
•4 thyme sprigs
•1 red onion or shallots, cut into thick slices
•2 firm and slightly tart apples*, cut in cubes
•salt
•freshly cracked black pepper
Directions:
- Pat pork dry and season
-Heat oil in Dutch oven - I used my oval Dutch
-Sear meat on all sides
-Add all pieces into the Dutch oven, mix your mustard, garlic and spread over
-Cover with your chicken stock and Apple cider
Place in the oven at 160 degrees
-Braise for 3 hours - turning the pork halfway through
- In the 40 minutes, cover pork with onions and apples and finish cooking.
Serve over mashed potatoes, or with crusty bread.
