🍲 Winter Wellness Recipe: Hearty Lentil & Vegetable Soup

As the weather cools down, there's nothing better than a nourishing bowl of homemade soup packed with wholesome ingredients.

✨ Why we love it:
• Rich in fibre from lentils and vegetables
• Provides plant-based protein
• Contains colourful vegetables that contribute antioxidants to your diet
• A simple way to support overall wellbeing during winter

🥕 Ingredients:
• 1 cup dried red lentils
• 1 carrot, diced
• 1 celery stalk, diced
• 1 zucchini, diced
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1L low-salt vegetable stock
• 1 tsp turmeric
• Black pepper to taste

👩‍🍳 Method:

Sauté onion and garlic until softened.
Add vegetables and cook for 2–3 minutes.
Stir in lentils, stock and turmeric.
Simmer for 25–30 minutes until lentils are tender.
Season with black pepper and serve warm.
