Tofu has been awarded best source of protein in the world. How cool is that?

If you are not already including it because you are worried about man b***s or some other stupid nonsense, you are missing out on a super food. And I don’t use that term lightly.

So when creating a healthy vegan, or any meal, you want to include 1/4 of your plate protein (hello tofu), 1/4 wholegrains (I ❤️ buckwheat for vegans) and 1/2 plate colourful veggies (I always aim for 4 minimum).

35g of protein and 57% of your daily fibre, in one bowl. 🌱

Spelt pasta salad with chickpeas and cashew pesto, and yes, it’s as delicious as it sounds.
Here’s what most people miss: fibre is the nutrient most non plant-based eaters are lacking, and it’s the one that plant-based eating delivers in abundance. This one meal covers around 57% of your daily needs.

And protein? Easy, once you know how to layer protein-rich plant foods. Spelt pasta + chickpeas + cashew pesto = 35g in a single serve.

As a nutritionist I am admittedly a little obsessed with blood tests, both for myself, my kids and my clients.

But if you are going to have them, make them worthwhile. Make sure you prepare well for them, 👆see recommendations above, and compare your results over the years to track what’s moving in the right or wrong direction. Don’t wait till your sick, catch it before you become sick.

Thats preventative medicine, and that’s what I am all about.

Of course blood tests are just one part of overall health care. What you eat, how much you move, connection with others, laughter and sleep are also all important to assess as an overall health assessment.

But your blood help us see what we can’t assess from the outside.

As a vegan, if nothing more, test your ACTIVE B12. You will likely have to pay for the test now with Medicare changes, but it is absolutely worth it.

And if you are taking a PPI or other acid lowering medication, are over 60, you also need to check your B12.

I am curious to know, have you tested your ACTIVE b12? Vote below

Protein overload is crowding out the nutrients you actually need

Everywhere you look, someone’s telling you to eat more protein. More, more, more.

But here’s the thing most people won’t tell you: most of us don’t need nearly as much as social media makes you think.

The actual recommended amount? 1.2–1.6g per kg of body weight. That’s it.

When you’re chasing protein numbers that are way beyond this, something has to give — and usually it’s the other macros and micros your body needs just as much. Fibre. Healthy fats. Phytonutrients. Balance.

Don’t let anyone convince you that “more is always better.” It’s not.

Want the full picture — the what, why and how of protein, done properly?
I’m running a practical protein masterclass tomorrow inside The Modern Vegan Membership. 20 minutes. No fluff. Just what you need to know and how to apply it.

Muesli gets such a bad rap But watch what a few simple additions can do.

This bowl started as an “ordinary” muesli — and became a genuine protein powerhouse.

Layer in dried apricots + mixed seeds for iron and zinc, grated pear for natural sweetness, vit C and fibre, then top with fortified soy milk and a scoop of soy protein crisps for extra protein.

Those additions alone add around 25g of protein to this bowl — plus a solid hit of iron, zinc and calcium. All before 8am 💪🌱

Breakfast doesn’t need to be complicated. It just needs to be layered right.

I share simple, nutrient-packed hacks like this every week inside The Modern Vegan Membership — link in bio 👆

Vegan for almost 20 years, and I still do this every time I make soup 🍲

Growing up with a Hungarian dad, soup was always the main event — just made with plants these days instead of chicken stock.
But here’s the catch: a lot of veggie soups (this one’s pumpkin + red lentil) fall short on protein. So my go-to fix is a simple side salad with quick pan-fried tofu — it boosts your protein, plus calcium, iron, vitamin C and vitamin K from the greens.

You can have your soup and eat it too. 🌱

I break down exactly how to hit your protein + calcium targets like this every week inside The Modern Vegan Membership — link in bio 👆
