When healthy breakfast feels like dessert it’s gonna be a good day! 😜
This is my absolute fave brekkie: Chilled Buckwheat Protein Pudding with raspberry chia jam and peanut butter, topped with cacao nibs 😋😋

You can enjoy this warm or cold and it’s easy to make!

Soak 1 cup of raw organic buckwheat in cold water overnight (or few hours minimum)
Drain and rinse
Place in a saucepan with 400ml coconut cream, 1/3 cup of Tropeaka salted caramel protein, 1/4 cup chia seeds, 1/4 cup sunflower seeds and 1/4 cup water
Stir well and cook on a low-medium heat for 10 mins - no need to bring to the boil
Enjoy warm with toppings like your favourite nut butter, chia jam (recipe ⬇️) Cacao nibs, coconut &/or fruit
Serve cold as above….also fab with coconut yogurt, berries and mango 👌🏼
Raspberry chia jam:
2 cups frozen raspberries
3 tbsp chia seeds (white or black)
1-2 tbsp honey

Heat fruit in a small saucepan over medium-high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble.  Use a spoon or potato masher to mash the fruit to your desired consistency.
Stir in the chia seeds until combined.  Add honey to taste.
Remove from heat and let cool for 5 minutes.  (The jam will thicken considerably as it cools.)
Give the jam one final good stir.  Then serve immediately, or transfer to a sealed container and refrigerate for up to 1 week, or freeze for up to 3 months. Use an ice cube tray to freeze and then you have tiny portions whenever you need!
