🍲 Turkey Minestrone Soup 🥕🌿

Looking for a hearty, veggie-packed meal that’s easy to make? This Turkey Minestrone is loaded with lean protein, beans, vegetables, and pasta for the perfect comforting bowl. ✨

🥣 Serves: 4

Ingredients:
✔️ 400g turkey mince
✔️ 1 tbsp olive oil
✔️ 3 cups reduced-salt vegetable or beef stock
✔️ 1 cup crushed tomatoes
✔️ ¾ cup small pasta
✔️ 1 cup cannellini beans
✔️ Zucchini, celery, green beans, spinach or kale
✔️ Carrot, onion, garlic
✔️ Oregano, basil, salt & pepper

👩‍🍳 Method:
1️⃣ Brown the turkey mince in olive oil.
2️⃣ Add onion, garlic, carrot, and celery. Cook for 3–4 minutes.
3️⃣ Add the remaining vegetables (except leafy greens) and stir.
4️⃣ Pour in the tomatoes, stock, and beans. Bring to a boil.
5️⃣ Add the pasta and simmer for 10–12 minutes, or until cooked.
6️⃣ Stir in the spinach or kale just before serving.

Perfect for meal prep, busy weeknights, or when you’re craving something warm and nourishing. ❤️🍲

Bowel cancer is the 4th most commonly diagnosed cancer in Australia, with around 15,000 Australians diagnosed each year.

The good news? When detected early, up to 99% of bowel cancers can be successfully treated ✨

Bowel cancer doesn’t always look how people expect.

Young, fit, active... these factors do not eliminate risk.

🚩 Key symptoms can include:
• Blood in the stool
• Persistent changes in bowel habits
• Ongoing diarrhoea or constipation
• Abdominal pain or bloating
• Unexplained fatigue
• Iron deficiency anaemia
• Unexplained weight loss

Many of these symptoms are often dismissed as:
• IBS
• Stress
• Haemorrhoids
• “Just a food intolerance”

While not all risk factors are within our control, diet is one factor we can influence 🥗💙

Throughout this month, we’ll be sharing practical nutrition information and evidence-based strategies to help support bowel health.

🍗✨ One Roasted Chicken, Multiple Meals — meal 4!

This Chicken & Vegetable Curry is the perfect batch-cook recipe for busy weeks 🙌 Packed with veggies, protein and warming flavours, it’s an easy meal prep option the whole family can enjoy 💛

✨ Batch Make a Chicken & Vegetable Curry
Serves: 6–8 portions

You will need:
• 1 whole roasted chicken, shredded (~580g meat)
• 2 medium green zucchinis, diced
• 2 small carrots, diced
• 6 button mushrooms, diced
• 1 head broccoli, cut into small pieces
• ½ cauliflower head, cut into small pieces
• 1 onion, diced
• 1 k**b ginger, diced
• 2 cloves garlic, minced
• 270ml light coconut milk
• 2 cups (500ml) salt-reduced vegetable or chicken stock
• 2 tbsp Mingle curry powder
OR
• 1 tsp each garam masala, cumin, black pepper, turmeric and coriander powder
• Chilli powder (optional) 🌶️

🍗✨ One Roasted Chicken, Multiple Meals — meal 3!

This quick and easy Chicken Pad See Ew is perfect for busy weeknights when you want something flavour-packed and satisfying 🙌

Chicken Pad See Ew
Serves: 2

Ingredients
• 400g Chang’s Super Lo-Cal Wide Noodles
• 2 tsp soy sauce
• 1 tbsp oyster sauce
• 2 tsp white vinegar
• 3 tbsp olive oil
• 1 garlic clove, minced
• 1 egg
• 150g shredded roasted chicken
• ½ head broccoli, cut into florets
• 4 stems g*i lan (Chinese broccoli), trimmed and roughly chopped

Method
1️⃣ In a small bowl, combine the soy sauce, oyster sauce and vinegar. Set aside.
2️⃣ Rinse the noodles under cold running water for 15 seconds as per packet instructions. Drain and set aside.
3️⃣ Heat the olive oil and garlic in a large pan over medium heat.
4️⃣ Add the g*i lan stems and broccoli, then add the g*i lan leaves. Cook until slightly softened.
5️⃣ Push the vegetables to the side of the pan and scramble the egg.
6️⃣ Add the noodles and shredded chicken to the pan.
7️⃣ Pour over the sauce and toss everything together until well combined and heated through ✨

🍜 Serve and enjoy!
