Beef, Lentil and Mushroom Cottage Pie with a Sweet Potato Crust
Serves 4 • Prep 20 minutes • Cook 50 minutes
Ingredients
Filling:
400g lean beef mince (5-star or extra lean)
1 teaspoon extra virgin olive oil
1 brown onion, finely diced
2 garlic cloves, crushed
1 carrot, finely diced
1 celery stick, finely diced
200g mushrooms, finely chopped
1 x 400g can brown lentils, drained and rinsed (about 1½ cups)
1 tablespoon tomato paste
1 x 400g can diced tomatoes
¾ cup beef stock
1 tablespoon Worcestershire sauce
2 teaspoons fresh thyme leaves, or 1 teaspoon dried
¾ cup frozen peas
Cracked black pepper
Sweet potato crust:
2 medium sweet potatoes (about 600g), skin on, scrubbed and thinly sliced
2 teaspoons extra virgin olive oil
¼ cup finely grated parmesan
Pinch of sea salt
Method
Preheat the oven to 200°C (180°C fan).
Heat the oil in a large non-stick frying pan over medium-high heat. Cook the onion, garlic, carrot and celery for 5 minutes until softened.
Add the mince and cook, breaking it up, until browned. Add the mushrooms and cook for another 3 to 4 minutes, until they’ve released their liquid.
Stir in the tomato paste, then add the tomatoes, stock, Worcestershire sauce, thyme and lentils. Simmer for 10 to 12 minutes, until thick and rich. Stir through the peas and season with pepper.
Meanwhile, toss the sweet potato slices with the olive oil. Microwave them in a covered bowl for 3 to 4 minutes, until just tender.
Spoon the filling into a 2-litre baking dish. Layer the sweet potato slices over the top, overlapping like roof tiles. Sprinkle with parmesan and a pinch of salt.
Bake for 25 to 30 minutes, until the top is golden and crispy at the edges. Serve with 🥗
