At over two months languishing un fed in the back of the fridge my starter is an absolute trouper.
Fed yesterday at 3 hours (pic1) it was looking good and doubled by 5hrs. I had expected it to need a couple of feeds to activate.
This was promising but would it deliver (it was super sour)?
The overnight prove was impressive (pic2) and the baked result was amazing!
Crumb (not shown) was possibly a little denser than usual but the flavour was great.
With thanks to Kasper Christensen for the gift of this creature 5-years ago along with a robust process that always delivers when I actually follow it 🙌
