Impromptu road trip to Cairns means one very important pit stop along the way… 🥭☕️

Gluten-free mango crepes served with mango sorbet, fresh mango, cream and mango sauce — basically mango in every possible form and I’m not complaining. 😍

The cream may have found its way to the dog because I’m not a huge cream fan 😂 but the rest was definitely all mine.

Paired with a much-needed coffee to fuel the long couple of days ahead.

And of course, we couldn’t leave without grabbing a couple of jars of their delicious mango jam to take home. Some road trip stops are non-negotiable! 🥭

When you’ve got overripe bananas sitting on the bench, don’t let them end up in the bin! Banana muffins are one of my favourite ways to use them up.

They’re quick, easy, freezer-friendly and make a delicious, surprisingly nutritious snack that even the fussiest eaters usually love.

I normally make these with oat flour for my son, but today (so I could enjoy them too!) I used Bask & Co.™️ Gluten Free Granola, Porridge, Bars & Bikkies Gluten Free Porridge as a substitute. It worked beautifully and made the perfect gluten free option without compromising on taste or texture. 🤩

You can also swap the dark choc chips for blueberries to create a delicious breakfast muffin or lunchbox snack.

2-minute Cinnamon Donut Pancake Bowl 🤎🥣

I had to try this recipe after seeing it on Mazzfit Recipes page, and it definitely didn’t disappoint! 🙌

It’s soft, fluffy, packed with protein and takes just 2 minutes in the microwave. I paired mine with a bowl of fresh fruit for some extra fibre, colour and micronutrients to round out the meal. 🍓🥝

One thing I love is that recipes like this show you don’t have to choose between food that’s nutritious and food that’s enjoyable. Simple, satisfying meals are often the ones you’re most likely to make again.

🥗 Building a balanced plate doesn’t have to be complicated.

A simple way to put together most main meals is to think about your plate in sections:

🥬 ½ plate = Vegetables/Salad
Fill half your plate with colourful vegetables or salad to boost your fibre, vitamins and minerals while helping keep you satisfied.

🥩 ¼ plate = Protein
This meal uses pork as the protein source. Protein helps support muscle repair, recovery and keeps you feeling fuller for longer.

🍠 ¼ plate = Carbohydrates
I’ve chosen roasted sweet potato here, but rice, pasta, potatoes, quinoa or other wholegrain options work just as well. Carbohydrates are your body’s preferred energy source and are especially important if you’re active.

🥄 Add a small amount of healthy fats
Healthy fats don’t need to take up a large section of the plate. In this meal, the salad dressing provides that healthy fat component. Other options include olive oil, avocado, nuts or seeds.

Remember, this is a general guide, not a strict rule. Your ideal plate may change depending on your age, goals, activity levels, appetite or health needs. Athletes, growing teenagers and highly active people often need more carbohydrates than this to fuel training and recovery.

Finally managed to catch Gluten-Free Cookies | Townsville at the Townsville Rotary Markets before she sold out! 🍪🤍

I’ve had these cookies before and knew how good they were, so I’d been trying to catch her at the markets over the last few weeks. She’d already sold out both times I went, so this time I made sure to get there early!

These cookies are HUGE and so good. My favourite is the White Chocolate Macadamia, while my son’s favourite is the Red Velvet. We also grabbed the Caramilk and Chocolate Chip flavours, and they definitely didn’t disappoint.

Pro tip: Don’t be silly like me and only buy four. 😳😩 Especially if you have to share!

If you somehow manage to make them last, they also keep really well in the fridge or freezer, so you can enjoy them for even longer.

If you haven’t tried Mimi’s GF Cookies yet, definitely add them to your list… just make sure you get there before they sell out! 🍪💙

Post-gym refuel 🤝💪

I was definitely extra hungry after today’s strength session at the gym, so Marion's Kitchen Chicken Pad See Ew was exactly what I was craving. 🍜

A good post-workout meal doesn’t have to be complicated. Pairing protein to support muscle recovery with carbohydrates to replenish energy stores, plus plenty of veggies for fibre and micronutrients, is a simple way to help your body recover and be ready for the next session.

Delicious, filling, and a reminder that it’s completely normal to feel hungrier after strength training—your body is working hard and needs fuel to recover.

Before Migraine Awareness Month comes to an end, I think it’s important to talk about this again 💜

Migraine is an invisible illness.

People with chronic migraine often get very good at looking “fine.” You might see us at work, replying to messages, parenting, smiling, showing up to events, or trying to get through the day normally.

What you usually don’t see:

* the nausea
* the pounding pain
* the light sensitivity
* the dizziness
* the exhaustion
* the brain fog
* the symptoms we push through quietly every single day

And honestly, some symptoms people with chronic migraine deal with regularly would send many others straight to hospital — but for us, they can become part of normal life.

That doesn’t mean it’s mild.
It doesn’t mean we’re coping well.
And it definitely doesn’t mean we aren’t struggling.

Living with chronic migraine often means constantly weighing up:
“Can I push through this?”
“Do I cancel?”
“Will resting help?”
“Will this turn into a multi-day attack?”

It’s exhausting physically, mentally, and emotionally.

So before this month ends, I just want to remind people:
Not every illness is visible.
Not every person who looks okay actually feels okay.

A little understanding, patience, and compassion goes a long way 💜

I finally gave the psyllium “jelly” trend a try 👀

I’ll admit, I was a little sceptical at first. On its own, you can definitely still taste that earthy psyllium husk flavour, which might not be for everyone. But layered over YoPRO vanilla yoghurt and topped with berries, it’s actually quite nice.

I made mine by mixing psyllium husk and a teaspoon of chia seeds with cranberry juice, then letting it thicken into the jelly-like texture. Once set, I spooned it over vanilla yoghurt and topped it with blueberries and raspberries.

Psyllium husk is well known for supporting digestive health and can be a simple way to increase your daily fibre intake, while the chia seeds add a little extra fibre and some plant-based omega-3s.

Will I be making it regularly? Maybe! It’s definitely a more enjoyable way to eat psyllium than simply stirring it into a glass of water.

Last night’s Friday fakeaway 🤌🍛

Butter chicken has to be one of the ultimate comfort meals, and this homemade version absolutely hit the spot. Rich, creamy and packed with flavour, it was the perfect way to kick off the weekend.

For a more authentic flavour, I always use Spice Zen | Herbs, Spices, Teas & Oils Butter Chicken Spice Blend. Not only does it bring all those beautiful warming spices together perfectly, but it’s also Coeliac Australia endorsed, which gives me extra confidence when cooking for my family.

To boost the veggies, I added carrots, cauliflower and spinach, making it an easy way to add a little extra goodness without taking away from the flavour.

Served with crispy pappadums and enjoyed from the comfort of home — proof that a fakeaway can be every bit as satisfying as takeaway. ✨
