The post-trail refuel always hits different. ☕️🥪

​First "real meal" after finishing the Hollyford Track, waiting to board the Milford Sound cruise. From remote backcountry trails to a small plane flight out, nothing beats that first warm coffee and a solid meal.

​I tend to want very specific foods after overnights and multidays. On multidays, all I can think about for the last few days is fresh vegetables 😅🥦 This toasted veggie roll was easily the best find to get some fresh greens in!

Fuelling Creativity with Functional Thai Flavours 🌶️✨

​When I travel, my first stop isn't always the sights; it's often the market and the kitchen. Taking cooking classes abroad (swipe through for this specific class in Chiang Mai!) is kinda a non-negotiable for me - it's one way I connect with the foundational principles of local nutrition and cultural identity.

This session was a beautiful reminder that true flavour is functional. Thai cooking relies heavily on potent, fresh aromatics (Slide 2) that pack a punch in both taste and functional benefits:

🌱 Slide 1/2: Tom Yum. Lemongrass, kaffir lime leaves, and fresh chillies aren't just seasoning; they are ancient functional tools - antioxidant-rich, anti-inflammatory, and fantastic for digestive health.

⚖️ Slide 3/4: Balancing textures. Pad Thai and Khao Soi demonstrated the nutritional balance of fresh rice noodles, lean protein, and abundant fresh fibre.

​💜 Slide 6: A mindful twist. The vibrant natural colour of that sticky rice (anthocyanins!) comes directly from butterfly pea flowers.

It’s all about balance, fresh ingredients, and respecting the raw products.

I've already integrated a few of these preparation principles into my daily life and upcoming recipes. Keep an eye out for more of the process (and maybe even a reel or two) when I drop a deeper look at this travel experience.
