It’s been a while!
After the year and all it entailed last year it has been a long time since I’ve posted. There was very little happening at Hands on Nutrition HQ in 2020. Remote learning and a lot of downtime was our main agenda but we’re keen to ramp back up in 2021!
And today we started - recipe testing for the nutrition workshops I’m running at St Mary’s Primary in Echuca next week!
Simply can’t wait to get back into schools talking to students about all things whole foods, our ‘why’ when it comes to making healthy choices that take time and effort and getting our hands dirty making nutritious snacks! Keep an eye out for what’s to come this year- hopefully including some exciting changes and some new stuff too 😊

ORANGE & APRICOT BALLS
🍑🍊🍑🍊🍑🍊🍑🍊🍑

Following a visit to our beautiful naturopath Samantha Bolitho Naturopathy yesterday, where during our consult she recommended upping our pumpkin and sunflower seed intake due to their wonderful vitamin and mineral content, particularly magnesium and zinc, Jess and I decided to create some bliss balls containing these nutritious seeds.

Seeing we have orange trees full of big ripe fruit at the moment, we decided to incorporate orange into the balls too.

Our finished product which is sugar, gluten, dairy and grain free turned out just delicious!

They could also be nut-free by omitting the pecans and increasing the seed content.

Can’t go past good ol’ spag bol as a great veggie-packed, additive-free meal!

We serve it with a gluten free brown rice, red lentil or sorghum pasta for a more tummy-friendly dinner.

Kids love it when spag bol night rolls around, plus it’s 🏃🏽‍♀️quick 😊easy 🥕healthy 🤤delicious and creates lots of left overs!

What nutritionist is talking about here is a big part of why I talk about ‘real food’. It is paramount to any factory produced product despite the clever marketing that promotes those products.

Highly processed breakfast cereals fortified with synthetic vitamins or money-driven companies promoting shakes and powders purportedly containing amazing health-giving vitamins and minerals simply aren’t what they say they are.

NOTHING can replace the nutrition you get from real food. Your body is designed to gain all it needs from real food. It cannot thrive on synthetically produced vitamins hidden in highly processed, high sugar food products.

Every week I seem to learn something new that infuriates me. For example; did you know that most vitamin B1 supplements are made from derivatives of coal tar? That you can actually extract iron from iron fortified foods with a magnet? That ascorbic acid (vitamin C) is made by reacting high fructose corn syrup with sulfuric acid?⁣
In today’s blog post ‘How To Eat Your Vitamins Through Food’ (link in bio) i’m sharing specific foods that will deliver a wide range of vitamins and minerals as well as some of my favourite food based supplements. Here’s a snapshot⁣ 👇🏻

VITAMIN D⁣
Lard is incredibly Vitamin D rich (as long as the pigs are healthy and have had lots of sunlight) 1 tsp contains 500IU of Vitamin D! Sardines, wild salmon and egg yolks from pastured chickens are another great source.⁣

B VITAMINS⁣
You cannot get B12 from plant-based sources. This vitamin is only found in animal products. Some people say that it’s possible to get B12 from plant sources like: seaweed, spirulina, fermented soy and brewers yeast. However, these sources actually contain B12 analogs (cobamides) that block the intake of and increase the need for true B12.⁣

VITAMIN A⁣
Interestingly you won’t get vitamin A from sweet potatoes or carrots, since the conversion of beta carotene to the usable form of vitamin A is virtually insignificant. Cod liver oil + organic liver is the best source of vitamin A with its cofactors.⁣

FOLATE⁣
Is an important nutrient for pregnant women as it helps the development of the nervous system and to avoid birth defects in babies. Unfortunately, many women are recommended folic acid (the synthetic version of folate) which isn’t well absorbed and can be problematic.⁣⁣⁣⁣⁣ There are many folate rich foods, for example; one cup of cooked lentils contains 358mcg of folate = 90% of the RDI. Liver is also a rich source, the amount will vary depending on the type, but it’s estimated to be roughly 290ug per 100g = 73% of the RDI.⁣

Rainy day baking ❤️❤️

Rubes found a book at the library recently called Mummy and Me Bake. Of course it was full of ‘white sugar/white wheat flour’ recipes that we don’t usually use in our house, but she was so excited to borrow it and bake the decorated cupcakes in it that I agreed.

We’ve made a couple small alterations to ingredients (Changing Habits rapadura sugar instead of white and subbed half the wheat flour for Otto's Naturals - Cassava Flour).

I have let her get a few things from the supermarket like cream cheese for icing and marshmallows and smarties so she can decorate the finished cakes like in the book.

This is a kid whose never had anything but ‘healthy’ birthday cakes, largely devoid of the bright colors and lollies that her friend’s cakes are covered in.

But she’s never complained. So I wanted to let her do it, to let her have a go at a typical childhood activity and jeepers is she stoked! She’s thanked me about 300 times!

She knows these cakes are very much a ‘sometimes food’, a treat during the school holidays and not something we’ll be doing again any time soon, so she’s lapping it right up!

Obviously, to me, nutrition is a massive part of being healthy; I used to think it was pretty much the only part, but through people like Marcus Pearce, Kim Morrison and Freedom Wellness I’ve learned that nourishing our souls and feeding our joyful and playful sides are just as important to our long term health and longevity.

A few people have asked for the nut free ball recipe video from Instagram.

As much as I’m very much a novice at making my own videos and I find it very hard to listen to my own voice🤪, here it is!

The ingredients are:

•100g dried apricots
•11 pitted dates
•50g sunflower seeds
•50g pumpkin seeds
•100g desiccated coconut
•1 tsp vanilla
•1 tbs honey

Optional extras are 1 heaped tbs cacao powder, or 2 teaspoons of cinnamon.

Put it all in a good food processor and blitz til well combined and sticking together when squeezed, roll into balls and roll in extra coconut.

Store in air tight container in fridge.

Eat!

Day 3 at done! See our insta story for pics. Three hectic but wonderful days prepping beautiful nutritious food for the 100 plus participants and staff. Bit of me time now with a crossword, tea and macadamia choccy before I collect my girls from their groups- who are having a ball as usual! Cannot speak highly enough of the beautiful staff who nurture and care for each and every child at camp. All ages, abilities and neurodiversities are catered for and celebrated. So privileged to be a part of it all again. 🧡

And it’s camp time again! Sunmer Camp started today and it was straight into it, first up this morning making healthy chocolate crackles and nut free bliss balls with two beautiful groups. We also cut up the vege sticks for lunch and packed all the lunch tubs with nutritious and energy-giving foods ready to be sent out to the various activities we have going on around Yarrawonga.
