Pizza Rounds
Serves 4
1 Serving (2 rounds) = 1 protein | 1 starch | 1 dairy | 1 condiment

Ingredients:
1 lb. ground turkey, chicken, or beef (raw measurement)
Clubhouse Garlic and Herb seasoning (salt-free)
1 cup Classico traditional pizza sauce (40 calories, 340mg sodium per 1/4 cup)
4 Blue Menu Whole Wheat English muffins (130 calories, 23g, 4g fiber, 150 mg sodium per muffin)
2 oz shredded Mozzarella cheese
2 oz fresh Parmesan

Directions:
Prepare the filling: Brown the meat. Add garlic & herb seasoning. Add the pizza sauce; stir to combine. Remove from heat.

Assemble the Pizza Rounds: Slice the English muffins into halves. Arrange them on a baking sheet. Divide the meat filling evenly between the muffin halves. Top each one with shredded Mozzarella and Parmesan

Bake: Place on a baking sheet and bake at 350 for 6 minutes, and then broil until the cheese is melted and browned.

Freeze: Place individual pizza rounds on a plate or small baking sheet lined with parchment and tuck it into the freezer. When they are solid, you can put them into a bag or container together. To reheat, air fry at 350 for 6 minutes or until they are warm and crispy.

The researchers found a clear link between higher consumption of these plant foods and a lower risk of developing high blood pressure.

For legumes, comparing the people who ate the most to those who ate the least revealed a 16% lower risk of hypertension. When looking at the dose-response relationship, the data showed a steady decrease in risk as portion sizes increased. Specifically, there was a 12% drop in risk for every 100 grams of legumes eaten per day. This benefit continued up to an intake of about 170 grams daily (roughly 1 cup of cooked beans), where the risk was about 30% lower.

Soy intake showed similar results. Comparing the highest consumers to the lowest showed a 19% lower risk of hypertension. The dose-response analysis found a 24% lower risk for every 100 grams consumed per day. However, unlike legumes, the benefit for soy appeared to plateau. The maximum reduction in risk, about 28% to 29%, was seen at an intake of 60 to 80 grams per day, with no additional benefits observed at higher amounts.

It is important to understand that these findings represent an association. Because the research is based on observation rather than controlled clinical trials, the study cannot prove that eating beans or soy directly caused the drop in blood pressure.

Grilled Tomatillo and Corn Salsa
Makes 6 cups, One Choice

Ingredients
3 pounds tomatillos, husks removed, rinsed clean
2 corn cobs, husks still on, OR 2 cups cooked corn
1/4 cup chopped fresh cilantro
2 cloves garlic, minced
1 jalapeño pepper, minced (remove seeds for less heat)
3 to 4 tablespoons lime juice
2 teaspoons salt
1/4 teaspoon cayenne
1/8 teaspoon cumin
1/4 teaspoon dried oregano
1/2 cup finely diced red onion

Directions
Prepare grill for direct, high heat. Place the tomatillos directly on the grill. Turn occasionally until charred in several places, and the color indicated the tomatillos are cooked and changes from vibrant green to olive green.

If you are grilling the corn as well, place the corn cobs, still in their husks, directly on the grill. (If you are using fresh corn, there is no need to soak them in water.)

Grill until the husks are completely charred and blackened all around. The flavor from the charred corn husks will cook into the corn as it grills.

Remove from grill. Let cool. Strip off the burnt husks and silks from the corn cobs. Use a sharp knife to cut away the corn kernels from the cobs.

Place the tomatillos, cilantro, garlic, jalapeño, lime juice, salt, cayenne, cumin and oregano in a food processor. Pulse until puréed, with a few remaining chunks of tomatillos.

Stir in the corn and minced red onion:
Adjust seasonings, add more salt to taste.
