Last week we celebrated Dr. Doni's 20 YEARS of taking care of spines. My part in the celebration was to bake MANY cupcakes for everyone to enjoy (and I hope you all did).
I've had quite a few requests for the recipe, so I am sharing it with you now. 😊

2/3 cup coconut yogurt
2/3 cup vegetable oil
3/4 cup plant milk
1 tsp lemon juice or apple cider vinegar (mix in with the plant milk & let stand a few minutes to make "buttermilk")
1 tbsp corn starch

Combine all of these ingredients in a bowl with the last & most secret ingredient of my old family recipe...

Grandma Crocker’s vintage small-batch cupcake mixture
(aka Betty Crocker cake mix) 😁

Mix with a hand mixer for 1-2 minutes until smooth, then pour into cupcake pan. Bake according to "Grandma Crocker's" instructions on the box. 😉

And lastly, ice the cooled cupcakes with Grandma Crocker’s conveniently packaged whipped vanilla icing.
