Southwest Tofu Bowls
Serves 4
1 Serving = 1 Protein | 1.5 Veg | 1 Condiment | 1 Starch | 1 Fat

Ingredients:
180g Sriracha Smoked Tofu, diced
2 cups cooked quinoa
1 cup black beans, no-salt-added
1 cup pico de gallo
2 cups green pepper, diced
2 cups corn
2 avocado

Directions:
Assemble each bowl with 1/2 cup quinoa, 45g smoked tofu, 1/4 cup black beans, 1/2 cup corn, 1/2 cup green pepper, and 1/4 cup pico de gallo. Garnish with 1/2 avocado when ready to eat.

Optional - add 1oz shredded cheese (1 dairy). You can substitute 1.4 oz cooked beef or chicken in place of tofu or increase to 1/2 cup black beans.

Ingredients:
340g Cavendish Farms Diner Style hashbrowns, raw measurement (110 calories, 20g carbohydrates, 2 g fibre, 20 mg sodium per 85g)
Paprika, Garlic, black pepper, onion powder
1 lb lean ground beef, raw measurement
4 Western Family 50% less salt baby dill, diced (60g)
1/2 cup Heinz Burger Sauce (40 calories, 3.5g fat, 115mg sodium per 1 tbsp)
4 oz cheese
4 cups lettuce
1 cup red onion, diced
2 cups tomato, diced

Directions:
Brown beef and season with paprika, garlic, black pepper, and onion powder. Bake Hashbrowns in oven (follow package instructions). Assemble bowls by dividing Hashbrowns and ground beef into 4 equal portions, then top each with 1 cup lettuce, 1/4 cup red onion, 1/2 cup tomato, 1 baby dill, 2 tbsp Burger Sauce, and 1 oz cheese.

Do you have a tendency to place others' needs above your own?

Are you struggling to reach your health goals because you think it's an inconvenience to others?

The problem with always putting other people first, is you teach them that you come second.

Meal Prep Doesn't Have to Be Complicated 🙌

It also doesn't mean you have to eat the same thing every day.

One of my favorite time-saving hacks is batch-cooking chicken breasts.

Season with a salt-free garlic & herb seasoning, cover, and bake at 350°F for 40 minutes, turning halfway through. Once cooked, shred with two forks and store it in the fridge.

Now you've got lean protein ready to throw into:
🥗 Buddha bowls
🫑 Stuffed peppers
🌯 Grilled wraps
🥗 Salads
🍝 Pasta dishes

Tonight's Mediterranean Grilled Wrap came together in just a few minutes, and the leftovers are packed and ready for tomorrow's lunch.

🌯 Mediterranean Grilled Wrap

Serves: 2
1 Serving = 1 Protein | 1 Starch | 1 Fat | ½ Dairy | ½ Vegetable

Ingredients:

* 1 large tortilla
* 5.6 oz cooked shredded chicken
* 2 tbsp PC Greek Dressing
* 1 oz feta cheese
* ¼ cup diced tomatoes
* ¼ cup diced green pepper
* ¼ cup diced red onion

Directions:
Mix the chicken with the Greek dressing. Layer onto the tortilla with the vegetables and feta. Fold into a wrap and grill in a pan or panini press until golden and warmed through. Slice in half and enjoy!

I was recently asked for my opinion on the trend of pushing ultra-high protein during perimenopause.

I wanted to share my response because I think a lot of women are feeling overwhelmed by all the conflicting nutrition advice.

"Okay, here are my thoughts. 😊

Personally, I think protein is incredibly important, especially as we age, but I'm not convinced that every woman needs to eat her body weight in protein. I think many people are already eating enough protein, while falling well short on fruits, vegetables, and fibre.

To me, the bigger issue is that so many women are running on caffeine, grabbing sugary snacks to get through the day, not sleeping enough, not drinking enough water, skipping exercise, and still drinking alcohol regularly. Those lifestyle factors can have a huge impact on how we feel, our hormones, our body composition, and our long-term health.

My philosophy has always been to focus on a balanced plate with all the food groups, appropriate portions, and habits that people can actually sustain for life. Protein absolutely deserves a place on that plate, but so do colourful produce, healthy carbs, and healthy fats.

I also think people forget that high-protein diets can become high-calorie diets if you're not mindful, and for some people they can contribute to digestive issues if fibre and fluids aren't keeping pace.

I'd love to see more women prioritize sleep, hydration, movement, fibre, and reducing alcohol before stressing over hitting an ultra-high protein target."

Protein matters. But so does everything else.

Balance will always win over extremes.

Think about your habits.

Chipotle Chicken Rounds
Serves 4
1 Serving (2 rounds) = 1 starch | 1 protein | 1 dairy | 1 condiment

Ingredients:
4 Dempsters Whole Grain English muffins (120 calories, 22g carbs, 2g fibre)
11.2 oz chicken, cooked measurement
4 oz shredded mozzarella cheese
1/4 cup Caliente Fresh Chipotle Hot Sauce (6 calories, 44mg sodium per 1 tbsp)
1/4 cup Hidden Valley Light Ranch (60 calories, 5 g fat, 310 mg per 2 tbsp)
Green onions, diced
Black pepper, salt-free Garlic & Herbs seasoning,
Paprika - to preference

Directions:
Combine the chicken with ranch, hot sauce, green onions, and seasoning. Slice English muffins into halves. Arrange them on a baking sheet. Divide the chicken filling evenly between the muffin halves. Top each one with shredded Mozzarella. Place on a baking sheet and bake at 350F for 6 minutes, and then broil at 400F for 5 minutes (or until the cheese is melted and browned).

Freeze: Place individual chicken rounds on a plate or small baking sheet lined with parchment and tuck it into the freezer. When they are solid, you can put them into a bag or container together. To reheat, air fry at 350 for 6 minutes or until they are warm and crispy.
