I made these pancakes when the boys were little; a great breakfast for those toddler years. Those little boys became big and although they still love eating them, they are a side to their main breakfast if I make them.
Now enter Sofia.... she insists she doesn't like eggs. 🤨 It doesn't matter how they are cooked she says. However, she loves paleo pancakes, made with eggs. So they have come back as a staple but the deal is that she has to help, especially the days I am running off to work early.
1 large egg is about 6 grams of protein.
Guidelines say 0.8 grams /kg of body weight per day is what we need for basic needs. I round up to 1 g/kg for most people and then my athletes need more depending on their sport/needs etc. That may look like 1.2 to 1.6 g/kg/day. NOT per pound, per kilogram of weight.
2 eggs, 1 small banana, 2 tbsp almond flour, mash, and make into pancakes on skillet with some coconut oil.
You can make more at once and keep in the fridge for a couple days.
