Stuffed Mushrooms (serves 4)

A simple, nourishing recipe packed with fresh herbs, garlic, sun-dried tomatoes, and savoury flavour. Perfect as a side dish or a plant-forward meal option!

Ingredients
• ½ cup brown rice crumbs
• ½ cup pecorino cheese OR ¼ cup nutritional yeast
• ½ cup parsley, chopped (leave a little for garnish)
• ¼ cup sun-dried tomatoes, chopped
• 2 Tbsp pine nuts
• 2 cloves garlic, minced
• ¼ tsp sea salt + pepper to taste
• 4 portobello mushrooms, wiped clean with towel and stems removed
• Avocado oil
• Red pepper flakes (optional)

Instructions:
Preheat oven or BBQ to 400°F (medium-high).
Mix crumbs, cheese/nutritional yeast, parsley, tomatoes, pine nuts, garlic, salt, and pepper.
Fill mushrooms, drizzle with avocado oil, and bake until tender and golden:
Oven: 18–22 min | BBQ (lid closed): 10–15 min
Garnish with parsley and red pepper flakes.

I treat a range of autoimmune conditions, but this one hits close to home.

In my early 20s, I developed Linear Scleroderma and Morphea seemingly overnight. One day I was fine, the next I was noticing visible skin changes, stiffness, and symptoms that didn't make sense. What followed were months of misdiagnosis, feeling dismissed, and an unsettling uncertainty.

A biopsy eventually confirmed Linear Scleroderma and Morphea - I finally had some answers.

That experience forever changed me, and has informed my understanding of autoimmune disease, both as a patient and a practitioner. It was the genesis of my core values as a Naturopathic Doctor:
--Support is paramount (no one should ever feel alone or unheard when navigating an autoimmune diagnosis)

Did you know nutrition may play a supportive role in APS? Emerging research is exploring how targeted nutrition and supplementation may support individuals living with APS.

APS is a complex autoimmune condition (I should know because I had it) associated with inflammation, vascular dysfunction, and an increased risk of clotting. Wellness Tip: Hydration matters, but so does water quality.

Different filtration systems are designed to target different contaminants:

• Pitcher filters → commonly reduce chlorine and improve taste
• Ion exchange filters → help soften water by removing minerals like calcium and magnesium
• Distillation systems → remove many contaminants through evaporation and condensation
• Carbon filters → help reduce chlorine, odours, and some organic compounds
• Reverse osmosis systems → filter dissolved solids, heavy metals, and other impurities through a semipermeable membrane (the gold standard BUT make sure to have a mineral-rich diet because these system can remove up to 98% of minerals, including those that are beneficial!)

The right option depends on your water source, lifestyle, and health goals.
