Sweet Potato Chips

Ingredients
• 1 japanese sweet potato
• 2 tbsp olive oil
• Sea salt, to taste

Directions
• Air fry the whole sweet potato at 400 F for about 40 minutes, or until softened. Depending on the size of your sweet potato, it may need a little more or less time.
• Place parchment paper on your countertop and drizzle 1 tbsp olive oil over the parchment
• Remove the sweet potato from the air fryer and slice it into rounds
• Arrange the slices on the parchment paper
• Place another sheet of parchment paper on top of the sweet potato slices
• Using the bottom of a drinking glass, gently press down on each slice until flattened
• Remove the top layer of parchment paper and drizzle the remaining olive oil over the flattened sweet potatoes
• Place the sweet potato rounds into the air fryer + air fry for 20 minutes, then carefully flip each piece and air fry for an additional 6 minutes, or until golden and crispy
• Let them cool for 8-10 minutes so they firm up!!
• Sprinkle with sea salt and enjoy!
