We’re thrilled to share the incredible news that our Annual Copernicus Lodge Golf Tournament raised $50,000 in support of our residents and essential care programs! It’s the largest amount to date during our golf tournaments!

This achievement wouldn’t have been possible without the generosity of our sponsors, the dedication of our volunteers, and the unwavering support of everyone who took part in this special day.

On Monday, Copernicus Lodge held its Annual General Meeting, a time to reflect on the past year and look ahead to what’s next. 🙏

The evening also marked a bittersweet farewell to Andrew Kwiatkowski, long-serving Board Director and Chair of the Copernicus Lodge Foundation.

Andrew’s years of dedication, leadership, and unwavering support have left a lasting impact on our organization and the lives of those we serve. We are truly grateful. ❤️

It’s official! Preparations for the Roncesvalles Polish Festival 2026 are underway! 🥟 🇵🇱

Join us behind the scenes at Copernicus Lodge as we come together to make one of Poland’s most beloved culinary traditions, pierogi!

Want to try making them at home?

Here’s a classic potato and cheese pierogi recipe:

🥣 Dough:
Whisk flour with a pinch of salt, add melted butter and warm milk
Knead until smooth and roll out the dough

🥔 Filling:
Mashed potatoes, cottage cheese, fried caramelized onions, salt and pepper to taste

🧑‍🍳 To assemble:
Cut rounds from the dough, place 1 tbsp of filling in the centre
Dip your finger in water and run it around the edge, fold and seal by pinching the edges together

🥟 For serving:
Sauté chopped onions until golden
Boil the pierogi, being careful not to crowd the pot. Once they float to the top, scoop them out
Garnish with sautéed onions and green onions

Seniors Month is here, and we’re kicking it off in the most beautiful way! 🎨

June is Seniors Month in Canada, a time to celebrate the contributions, talents, and achievements of the incredible older adults in our communities. This year, we’re opening the Exhibit Wall of our very own resident artist, Louis Itiniant! 🖼

Louis was born in Windsor in 1929 and spent his career in radio engineering and computer science. It wasn’t until the COVID-19 pandemic that he discovered his passion for art, developing a truly one-of-a-kind style he describes as “encapsulating phrases within art.” His minimalist pieces may seem simple at first glance, but each one holds layers of meaning, inviting every viewer to find their own story within them. 💛

We are also so grateful to our volunteer, Mr. Henry, whose dedication and hard work brought this exhibit to life. This is what community looks like.

The exhibit is open for all residents, families, visitors, and staff to enjoy. Come see it for yourself and experience something truly special!! 🙏
