Nonna’s amaretti cookies 🍪

Playing around with my grandmas’ recipes and making them “bulletproof” is definitely my jam.

These are easy, chewy, delicious and healthy. Yes, healthy!

• 1 cup almond flour
• 3 tablespoons xylitol
• 1.5 tablespoons water
• .5 tablespoon organic almond extract
• 1 teaspoon baking powder
• pinch of salt

Mix all dry ingredients in a bowl, add in water and almond extract, mix. Scoop into 1 tablespoon sized balls, top off with a whole almond. Bake at 350 for 15-20 mins.

Ingredients
½ cup unsalted grass fed butter
½ cup coconut sugar
¼ cup xylitol
¼ cup oat milk
¼ teaspoon salt
1 teaspoon vanilla extract
3½ cups quick cooking gluten free oats

Instructions
Preheat the oven to 325°F/162°C and grease and line a 9x9 inch pan with parchment paper.

In a food processor, grind 2 cups of the oats until it resembles a fine flour, about a minute on high speed. Transfer to a large bowl and stir in the remaining 1½ cups of oats. Set aside.

In a small saucepan, melt the butter, coconut sugar, xylitol and salt together over medium heat until the butter is completely melted and the sugar & xylitol have dissolved. Remove from heat and whisk in the milk and vanilla extract.

Pour the butter mixture over the oats and stir until thoroughly combined. Scoop into your prepared pan.

Bake for 15-20 minutes until the edges are slightly golden and the middle no longer looks wet.

Allow to cool on a rack before slicing into 8 bars. This is very important! The bars crumble easily! Store in an airtight container in the fridge.

Happy New Year!

I haven’t been on this account in a year...I haven’t been eating in over 2 years. From rough pregnancies to being rushed around and eating whatever was left over from my Uber Eats order the night before, I have not made good decisions when it came to my health.

This account has always inspired me to eat healthier and share little hacks or recipes I find useful. I want to eat healthier and make better choices so my girls can learn from me and hopefully follow in these footsteps.

In a bowl mix:
1 pasture raised egg (this is why the batter turns out so yellow/orange)
1/2 of rice flour or coconut flour both (I mixed mine)
A splash of oil
Enough water to make the mixture thicker than crêpe mix
Pinch of stevia or xylitol
Mix well with a whisk or fork
Heat the pan and add coconut oil
Fry until edges are browned
I added a light layer of raw honey and a thick layer of grass fed butter to mine! Top with anything your heart desires 🍯🍌🍓
