Introducing – the fresh & nutritious summer salad
The name says it all 🍓🫐🥗🧀🧅
Ingredients - SALAD
- 150 g ready to eat baby spinach (~5 cups)
- 160 g fresh strawberries, sliced (~1 cup)
- 125 g fresh raspberries (~1 cup)
- 190 g fresh blueberries (~1 cup)
- 100 g red onion, diced (~1 cup)
- 170 g goat cheese, crumbled (~1 cup)
- 19 ea pecans (~1/4 cup)
Ingredients - DRESSING
- 30 mL extra virgin olive oil (2 tbsp)
- 1/2 ea lemon, juiced (~3 tbsp or to taste)
- 1 clove garlic, minced
- salt & pepper to taste
Instructions
1. In a dressing bottle or glass jar, combine olive oil, lemon juice, minced garlic, salt & pepper. Shake it well.
2. In a large bowl, combine all the berries, spinach, and red onion. Toss to combine.
3. Add crumbled goat cheese and pecans.
4. Drizzle the dressing over when ready to enjoy (1/4 total dressing per salad serving).
So refreshing and full of nutrients, salad – with some exciting ingredients – makes for a near perfect meal addition when the weather heats up... and is a perfect diet addition to kick off a new week!
