Made with just a few simple ingredients and perfect for busy mornings or packing in a school lunchbox.

Easy Banana Oat Pancakes
Perfect for breakfast or a school lunchbox!
Makes: about 8 small pancakes
Ingredients
1 ripe banana
2 eggs
½ cup rolled oats
½ tsp cinnamon
½ tsp baking powder
1 tsp vanilla extract (optional)
A little butter or oil for the pan
Directions
Add the banana, eggs, oats, cinnamon, baking powder, and vanilla to a blender.
Blend until smooth.
Heat a lightly greased non-stick pan over medium-low heat.
Pour small amounts of batter into the pan to make mini pancakes.
Cook for 2–3 minutes, until small bubbles appear.
Flip and cook for another 1–2 minutes until golden.
Lunchbox Tip
Pack the pancakes with:
Fresh berries or banana slices
Greek yogurt for dipping
A little sunflower seed butter (if allowed at school)
