Stuffed Zucchini Boats

Ingredients
• 2 large zucchini, or 3 medium, halved lengthwise
• 1 large egg, beaten
• 1 cup torn crusty bread, crumbled
• 4 cup grated Parmesan cheese
• ½ garlic clove, minced
• ½ cup quartered cherry tomatoes
• 2 teaspoons lemon zest
• 2 tablespoons fresh thyme leaves
• ¼ cup pine nuts
• ¼ teaspoon sea salt, plus more for sprinkling
• Extra-virgin olive oil, for drizzling
• Freshly ground black pepper
• Pesto, for serving

Directions:
1. Preheat the oven to 475°F and line a baking sheet with parchment paper.
2. Use a small spoon to hollow out the flesh of the zucchini, leaving a little more than ¼-inch thickness around the edges. Place them cut side up on the baking sheet.
3. Make the filling:
a. Place the scooped-out zucchini flesh into a mesh strainer and gently press out any excess water. You should be left with 1 cup flesh. Chop any coarse pieces and transfer to a medium bowl with the egg, bread crumbs, cheese, garlic, tomatoes, lemon zest, thyme, pine nuts, and salt. Mix until combined, using your hands if necessary.
4. Drizzle the hollowed-out zucchini with olive oil and sprinkle with salt and pepper.
5. Spoon in the filling and bake for 16 to 18 minutes, or until the filling is set and is golden brown and crisp on top
6. Serve with pesto

“​I joined The Fit Club six weeks ago. This was my first time ever joining a fitness club, and my goals were to increase muscle mass and build strength.
​The coaches and other members were incredibly welcoming, even though many have been training there for years. Banana Bread

Ingredients
• 2 cups mashed bananas (about 4 bananas)
• ½ cup maple syrup
• ½ cup melted coconut oil, plus more for the pan
• 2 large eggs
• 1 tsp vanilla extract
• 1 cup all-purpose flour
• ¾ cup whole wheat flour
• 1 teaspoon baking soda
• ½ teaspoon cinnamon
• ½ teaspoon sea salt
• ¼ teaspoon nutmeg
• ½ cup chopped walnuts (if desired)
• 2 tablespoons whole rolled oats

Directions:
1. Preheat the oven to 350°F and grease an 8x4 or 9x5-inch loaf pan
2. In a large bowl, whisk together the mashed banana, maple syrup, coconut oil, eggs, and vanilla.
3. In a medium bowl, whisk together the all-purpose and whole wheat flours, baking soda, cinnamon, salt, and nutmeg.
4. Add the dry ingredients to the wet ingredients and stir until just combined. Don't overmix. Fold in the walnuts (if desired)
5. Pour the batter into the prepared pan and sprinkle the oats evenly on top.
6. Bake for 50 to 65 minutes. A toothpick inserted should come out with just a few moist crumbs attached. I like to check the loaf after 45 minutes.
