Posting my lunch today so I can reference it when I’m lacking on quick ideas. It’s not my ‘recipe’ but here’s my rendition:
Spinach
Cucumber
Avocado
Red onion
Cherry Tomatoes
Tuna
Salt & Pepper

Drizzled with a mixture of:
Olive oil
Apple cider vinegar

I haven’t posted to my feed in a long time but this burrito bowl was so beautiful I thought it deserved a permanent spot here. It will also serve as a reminder to myself for a quick & delicious dinner idea. Cilantro lime rice, seasoned ground beef & onions, pico de gallo, corn, black beans, tomatoes, green onion, guacamole, & sour cream. 👌🏼

Parker has tried 100 different foods before his first birthday!! 🎉 This happy little guy loves eating and it’s been such a fun adventure working his way up to 100. He hasn’t rejected any food yet! His least favourites were probably raw tomato and canned artichokes. But he still ate them! Every other food is fair game for his favourite as he happily eats anything I give him! Soon enough he’ll be my little sous chef! Can’t wait to continue this fun food journey with him! Thanks for following along with us and enjoying the entertainment! I’ll try to put a list of all his foods in the comments if it gives me enough room.

The *Pineridge Salad!* This is one of my favourite salads from one of my favourite restaurants! This is my version that I recreated to enjoy anytime!

*Candied Walnuts/Pecans:*
2 Tbsp butter
4 Tbsp brown sugar
3/4 cup walnut or pecan pieces

Melt butter & sugar down in a frying pan on medium low and then add the walnuts. Toss frequently for a couple minutes to coat & toast them so they don’t burn. Remove the walnuts from the pan onto parchment paper to separate & cool. They will harden as they cool.

*Maple Dijon Vinaigrette:* (from )
2 Tbsp maple syrup
1 Tbsp Dijon mustard
2 Tbsp apple cider vinegar
1/3 cup oil (I used avocado)

Whisk together all ingredients and set aside. Refrigerate leftovers.

For the *salad:*
Combine leafy greens with sliced apple, shredded smoked Gouda cheese ( ), and candied nuts. Drizzle the salad dressing overtop and enjoy!! It comes together fairly quickly and is SOOOO delicious!!

Morning! It’s been awhile since I posted on my feed so I thought I would share one of my go-to breakfasts. I have been loving omelettes lately - any and all variations. Cauliflower, broccoli, zuchinni, onion or tomato feta or broccoli & cheese, with the option of adding in some bacon or ham! It’s so easy - I chop the veggies pretty small so that they cook quicker and add them to half the pan on top of 2 scrambled eggs. Add a little bit of cheese & then once the egg has cooked a bit I fold it over and top with another little sprinkle of cheese & cover with a lid so that the egg can finish cooking inside. Salt & pepper to taste. Then slide it onto a plate, top with some hot sauce and a side of avocado and you have a delicious, healthy breakfast! ✌🏼

Happy Easter! 🐣✝️ Another holiday has come & gone during this pandemic where we haven’t been able to gather for family dinners as we normally would. Until then, I am enjoying the small things - walks with family & friends, the beautiful sunshine & warmer spring weather, and these last few days of quiet with just Dave & I before baby arrives. 💖 Hope you all had a good day today too!

Not that you need another reason to buy Mini Eggs, but here’s an awesome way to incorporate some into cookies! Find the full recipe here (link in bio) ➡️ https://themodernmenu.com/peanut-butter-monster-cookies
**Ingredients**
1/4 cup butter
3/4 cup peanut butter (not natural peanut butter)
1/3 cup white granulated sugar
1/3 cup brown sugar – packed
2 eggs
1 tsp vanilla
1 tsp baking soda
2 cups oats (use oats labelled "Gluten-Free" if needed)
1/3 cup chocolate chips
1/3 cup shredded coconut
1/2 cup Mini Eggs/Eggies – crushed
pinch of salt
**Instructions**
Preheat your oven to 350°F. Line two baking sheets with baking mats or parchment paper and set aside.
In a medium bowl, beat together the butter, peanut butter, and sugars until smooth & creamy. Add in the eggs and vanilla and mix to combine.
Add in the remaining ingredients and stir until combined.
Scoop into 1-inch balls and place on the cookie sheet leaving approx 2 inches between cookies. Bake for 8-10 minutes until the bottoms are lightly browned.
Remove from the oven and allow the cookies to cool on the baking sheet for at least 5+ minutes until they have set enough to transfer to a wire cooling rack.
Feel free to change up the add-ins using whatever you have at home – h**p hearts, nuts, seeds, etc.! Enjoy!😊 .
