Apparently today is National Zucchini Day in the USA. Ok in Scotland, we don’t have a national day for it… and we don’t even call it zucchini…but we’re more than happy to join in and share one of our favourite courgette recipes - oaty courgette wraps.

Made with three simple ingredients - courgettes, cheese and oats - they’re a tasty alternative to traditional wraps. Just add your favourite sandwich filling, roll them up and enjoy.

This chorizo, oat and vegetable frittata recipe, created by Garioch Community Kitchen went down a storm at the Turriff Show on Sunday.

It’s great for breakfast, lunch, picnic or meal prep.

The recipe is very flexible and is a great way to use up any leftover vegetables, cheese, herbs, chicken, bacon or whatever you have in the fridge.

Make it as one large frittata to slice and share, or bake it in a muffin tin for handy individual portions.

Enjoy it warm from the oven, pack it for lunch or a picnic, or make it ahead for an easy breakfast during the week.

We put Garioch Community Kitchen’s delicious oat muffin recipes to the taste test at the Turriff Show.

In the sweet corner raspberry and lemon. In the savoury corner smoky courgette and parmesan.

Our taste tester, Caroline, was firmly , and by the time theatre host Cat returned after taking the tray around the Cookery Theatre, all the courgette and parmesan muffins had disappeared, with just a few sweet ones left!
