New this week: Organic Butternut Squash and here's a few ideas of what to do with them...
Velvety Pasta Sauce: Blend roasted squash with nutritional yeast, garlic, vegetable broth, and soaked cashews for a rich, dairy-free "Alfredo" or mac and cheese style sauce.
Squash Hummus: Twist your standard recipe by blending roasted squash cubes directly into chickpea hummus with tahini, garlic, and a touch of cumin.
Nacho "Cheese": Blend boiled squash and potatoes with pickled jalapeño juice, nutritional yeast, garlic powder, and smoked paprika for a pourable vegan cheese sauce.
Autumn Pâté: Blitz roasted squash with a tin of cannellini beans, a spoonful of tahini, lemon juice, and sage for a smooth sandwich spread or dip.
