New this week: Fresh Organic Locally Grown Chicory Leaves 🍃 🥬🍃

But Chicory Leaves aren't just any old salad leaves, they are nutritional powerhouses that bring a crisp, peppery crunch to your meals.

A single serving of chicory leaves provides over 100% of your daily required Vitamin K, which is essential for healthy blood clotting and bone mineralisation.

The leaves are packed with lutein and zeaxanthin, two vital antioxidants that accumulate in the retina to filter harmful blue light and prevent macular degeneration.

The bitter compounds in the leaves hit receptors on your tongue, instantly signaling your stomach to produce digestive enzymes before your meal even arrives.

Chicory leaves can be intimidating due to their bitterness, but you can easily control the intensity by pairing them with something sweet, something fatty and something acidic.

Toss chicory leaves with sliced pears (sweet), toasted walnuts and shaved parmesan (fat), and a lemon-mustard vinaigrette (acid). The sweetness completely neutralizes the bitter edge.

New Product Alert 📢

Carley's Organic Raw Pecan Nut Butter is crafted from 100% organic, unroasted pecans that are cool-milled below 44°C to retain their raw nutritional integrity. It is also free from palm oil, emulsifiers, added sugar, and salt.

Pecans rank among the highest foods in antioxidants and are loaded with heart-healthy monounsaturated oleic acids.

Pecan butter has a uniquely rich flavour often compared to pecan pie. Its silky texture allows for a wide range of sweet and savoury recipes.

So how will you eat yours?

🥞 Slather it onto sourdough toast, crumpets, or warm pancakes.
🥣 Swirl a tablespoon into porridge or overnight oats for an instant flavour boost.
🍏 Pair it with crisp apple slices, bananas, or fresh figs.
🥧 Mix it into the base filling of a traditional pecan tart to deepen the nut profile and guarantee a creamy consistency.
🍪 Use it as a direct substitute for almond or peanut butter in vegan, gluten-free cookie recipes.
🍨 Warm a small amount and drizzle it over ice cream.
🍛 Whisk it into satay-style sauces, vegetable stews, or savoury African peanut-style curries.
🥗 Whisk with olive oil, apple cider vinegar, and a touch of maple syrup for a nutty salad dressing.
🥤Blend a scoop with almond milk, a banana, dates, and cinnamon for a pie-flavored smoothie.

🥬 Reviving Leafy Greens & Herbs
Ice bath: Submerge wilted lettuce, spinach, or herbs in a bowl of ice-cold water for 15 to 30 minutes to rehydrate the cell walls.
Trim stems: Cut a fresh sliver off the bottom of herb stems before soaking so they can drink water efficiently.
Acid shock: Add a splash of lemon juice or apple cider vinegar to the cold water bath to boost crisping action.
Dry completely: Spin or pat the greens dry after their bath, as excess surface moisture causes rapid rotting in the fridge.

🥕 Refreshing Root Veg & Stalks
Deep soak: Place soft carrots, celery, or radishes directly into a jar of cold water and leave it in the fridge overnight.
Peel trick: Remove the outer layer of sad-looking carrots or parsnips to instantly reveal firmer, sweeter flesh beneath.
Trim bottoms: Slice off the dried base of celery stalks or asparagus before upright submersion in water.

New from Amary Farm this week: Globe Artichokes

So how do you eat them?

Steaming or boiling whole is the easiest and most classic way to cook and eat a fresh globe artichoke. Because it is a large, edible thistle, eating it is a unique, hands-on process of scraping the flesh off the petals with your teeth until you reach the highly prized heart at the centre.

How to Prep a Whole Artichoke
•Rinse under cold running water, pulling the petals open slightly to flush out any trapped grit.
•Use a heavy serrated knife to slice about 2.5cm (1 inch) off the pointed top of the artichoke globe.
•Use kitchen scissors to snip off the sharp, thorny tips of the remaining outer petals.
•Artichokes oxidise and turn brown instantly when cut. Rub all cut edges immediately with a fresh lemon wedge to keep them green.

How to Cook It (The Steaming Method)
•Place a steaming basket inside a large pot with a few centimetres of water.
•Toss a slice of lemon, a peeled garlic clove, and a bay leaf into the water for aromatics.
•Stand the artichoke upright (or stem-side up) in the basket, cover with a tight lid, and bring to a boil.
•Steam on medium-low heat for 30 to 45 minutes.
•Test for doneness: Insert a knife into the base stem. If it slides in easily like a baked potato, and an outer leaf pulls off with zero resistance, it is ready.

How to Eat It
•Pull off the outer petals one by one. Dip the soft, pale, fleshy bottom end into your sauce. Put that end in your mouth, bite down lightly, and pull the leaf through your teeth to scrape off the delicious, tender pulp. Discard the rest of the tough petal. Keep working your way inward.
•As you get to the centre, the leaves will become thin and purple-tipped. Pull this entire cone of cone-shaped leaves off.
•You will now see a fuzzy, hairy crater. This is the "choke," and it is completely inedible. Use a spoon to gently scrape all the fuzz away and throw it out.
•Underneath the fuzz is a clean, solid cup of green-grey flesh. This is the artichoke heart. Cut it into pieces, dunk it in your sauce, and eat the whole thing.

New Product Alert 📢 MAPLE BUTTER!

St Lawrence Gold Organic Pure Maple Butter is a premium, velvety spread made entirely from 100% pure organic Canadian maple syrup.

Despite the name, it contains zero dairy or actual butter; instead, it is created by precisely heating, rapidly cooling, and churning pure maple sap until it achieves a smooth, spreadable, honey-like texture.

So what are you going to do with it?

Spread it directly onto warm croissants, crumpets, bagels, muffins, or sourdough toast.

Dollop it over pancakes, crepes, or French toast as a thick alternative to runny syrup.

Swirl a spoonful straight into warm morning oats or yoghurt for a burst of caramel sweetness.

Use it directly as a gourmet glaze or icing for cinnamon buns, fruit cakes, or walnut swirls.

Layer it inside crepes, sandwich cookies, or use it as a decadent dip for fresh apple slices and berries.

Melt it over roasted root vegetables like carrots, parsnips, squash, or sweet potatoes.

Melt a small dollop over freshly grilled sweetcorn or use it to bind a sweet and sharp homemade burger sauce.

Eat it straight from the jar with a spoon!

Natural Bleach, also known as oxygen bleach or Percarbonate of Soda. This is a safe and non-toxic, biodegradable alternative to harsh chlorine bleach. When dissolved in water it releases oxygen which acts as a powerful stain remover, deodoriser and disinfectant.

It breaks down harmlessly to oxygen, water and sodium carbonate. This miracle product brightens both whites and coloured fabrics and prevents them from yellowing. It’s great at removing organic stains like tea and coffee, fruit juice, food sauces, grass stains, pet stains, blood and red wine. Natural Bleach is also a great alternative to chlorine bleach in the bathroom. Dissolve in warm water to safely clean and disinfect the loo and clean drains. Also, use to easily and safely clean and bleach sinks, baths and general household cleaning.

Here are our 4 top uses

1. Eco-Friendly Laundry Booster & Stain Remover
Sodium percarbonate is the active engine behind most commercial "oxygen bleach" and color-safe laundry powders. Unlike chlorine bleach, it is safe for colorfast fabrics and will not cause cotton to yellow or weaken over time.

2. Deep Cleaning Tile, Grout, and Hard Surfaces
The intense fizzing action and alkaline nature of sodium percarbonate make it excellent for lifting deeply embedded dirt from porous household surfaces such as tile grout and bathroom mold.

3. Kitchen Ware Restoration & De-Staining
Because it decomposes into completely food-safe residues, sodium percarbonate is heavily utilized for deep cleaning kitchen equipment and sanitizing food-contact surfaces.

4. Heavy-Duty Outdoor Cleaning
The oxidising strength of sodium percarbonate is ideal for clearing biological growth and weathered stains from exterior structures like decking and patios.

Bring along your own container or we can scoop some into a paper bag for you.

Organic whole h**p seeds are a crunchy, unshelled nutrient powerhouse that offer distinct advantages over shelled h**p seeds (h**p hearts) due to their high fibre content.

* Complete Plant Protein: They contain all nine essential amino acids, making them a rare, high-quality complete protein source for vegans and vegetarians.
* High Dietary Fibre: Because the outer hull is left intact, whole h**p seeds provide an abundance of soluble and insoluble fiber to improve digestion and support gut health.
* Optimal Fatty Acid Ratio: They deliver an ideal 3:1 ratio of Omega-6 to Omega-3 fatty acids, which helps lower blood pressure and combat systemic inflammation.
* Heart and Vessel Health: Packed with the amino acid arginine, they help produce nitric oxide, a gas that relaxes blood vessels and improves overall circulation.
* Rich in Essential Minerals: A single serving provides excellent amounts of magnesium (for sleep and heart rhythm), zinc (for immunity), and iron (for energy transport).

You can eat whole h**p seeds raw, cooked, or toasted. They have a crunchy outer shell and a nutty flavour, offering a rich source of fibre, protein, and healthy fats. Sprinkle them on your porridge, add to smoothies. Create your own h**p milk or bake them into bread, cookies or muffins. The possibilities are endless.

Recipe 1: Meatiest Flame-Grilled Vegan Burgers
Vegetable suet mimics the "fat pockets" found in high-end beef burgers. This creates incredible juiciness that won't completely dry out over the open flames.
125g TVP (Textured Vegetable Protein) or soya mince
60g vital wheat gluten
2 tbsp vegetable suet (chilled)
1 cooked vacuum-packed beetroot
1 tbsp liquid smoke & 1 tbsp soy sauce
1 tbsp gravy granules & 1/2 tsp smoked paprika
2 tbsp cornflour mixed with 2 tbsp water
Boil the soya mince in water for 10 minutes, then drain and squeeze out all excess water thoroughly.
Blitz the beetroot, soy sauce, liquid smoke, gravy granules, and smoked paprika in a blender until cohesive but not pureed.
In a large bowl, mix the beetroot mixture with the hydrated mince and vital wheat gluten. Stir in the cornflour slurry and knead for 5 minutes until stretchy.
Gently fold the cold vegetable suet into the mixture. Do not overwork it; you want distinct specks of suet remaining visible.
Form into 4 large patties. Wrap tightly in greaseproof paper and steam for 45 minutes to lock the structural shape.
Brush with a mix of BBQ sauce and oil, then grill for 2–3 minutes per side until beautifully charred.

Recipe 2: BBQ Skewered Herby Suet Dumplings
Dumplings aren't just for winter stews! Cooking them on a barbecue grid creates an incredibly soft, pillow-like interior with a crispy, smoky outer crust.
200g self-raising flour
100g vegetable suet
1 tbsp chopped fresh parsley & thyme
1/2 tsp fine sea salt & black pepper
120ml ice-cold water
Melted vegan butter & BBQ rub
Combine the self-raising flour, vegetable suet, fresh herbs, salt, and pepper in a bowl.
Gradually add the ice-cold water, tossing with a fork until a soft dough forms. Avoid over-kneading so the suet stays cold.
Divide the mixture and roll into small, bite-sized balls.
Drop the dumplings into a pot of boiling veg stock for 5 minutes just to firm up the core. Drain and pat dry.
Thread the dumplings onto metal or soaked wooden skewers, brush the dumplings generously with melted vegan butter and dust with BBQ rub. Grill on a well-oiled BBQ rack over indirect heat for 8–10 minutes, turning often until golden brown and crispy.
