You know I love to make whatever I can from scratch, and stock is no exception! I’m gearing up for soup and stew season so making sure my freezer is stocked up ready to go!

Making stock may feel time consuming, but it’s actually super simple and needs little work. The hob is doing all of the hard work! These pots will keep in the freezer for about 3 months and can be used just like the supermarket alternatives. Thanks to for the recipe and inspo with this! Her page is well worth a follow for loads of great home cooking ideas!

Ingredients:
2 left over chicken carcasses including any skin (I had one frozen from a previous week)
Onion
Garlic
Carrots
Mixed herbs (fresh better but can use dried)
Bay leafs
Whole peppercorns
2 litres water

Method:
Put all ingredients into a large heavy bottomed pan.
Simmer for at least 4 hours, longer if possible
Put through a sieve to extract liquid
(This can now be used as stock but I like to make concentrated so it can be easily stored)
Re-boil liquid for about 1 hour until reduced down
Put into silicone ice cube trays (or cupcake cases 😂)
Chill overnight in the fridge to set
Once set can be stored in the freezer for up to 3 months and used from frozen!

Fab (if not a little warm!!) couple of days judging at the Nourish Awards again this year! It’s always something I look forward to!

I was asked why I do it! That’s easy:
1 - I get to spend a couple of days trying innovative and interesting new foods
2 - I get to spend time with fellow judges, who are always fab people!
3 - I get loads of inspo for new products to add into Wholesome Hampers

So really, it’s an easy yes from me! Now, on to the supplements!

Does anyone else notice that food and drink tastes so much better when it’s served in beautiful tableware?

Maybe it’s just me, but a morning coffee somehow feels more luxurious in a lovely mug, and even the simplest lunch feels a little more special on a beautiful plate.

I popped into M&S recently and found myself completely distracted by their homeware section. The colours, textures and designs were gorgeous, so I thought I’d share a few of my favourites.

As someone who loves food, I genuinely believe that creating a lovely eating experience can make us slow down, savour our meals and find a little more joy in the everyday.

Last day of judging for me this year at the Great Taste Awards yesterday. And what a day it was!

I absolutely love judging for these awards! It’s a real privilege that I’ll always be grateful for!

Anyone else pre-order things months before they are released and then forget about it??

I had a lovely surprise when latest book turned up yesterday! I’ve got her other 2 so instantly knew I needed this one too! And it has not disappointed!

Looking through last night, I want to make EVERYTHING!!! Sooo many lovely recipes to try, and all super speedy! Right up my street!

Even my youngest was impressed, she has already requested the ‘Snickers Yogurt Bowl’ for breakfast this morning! I can confirm, it was delicious! Sadly no photo though, I may be able to get a decent breakfast out but taking photos while trying to get her out of the door for school was not happening!!

I really didn’t want to go to the gym this morning.

I was tired.
It was warm in bed.
I had work to do.
And honestly… I just couldn’t be bothered.

But I also knew I’d feel better afterwards.

And that’s the funny thing about looking after yourself sometimes…
The things that help the most are often the things we least feel like doing in the moment.

Going for a walk.
Cooking something nourishing.
Getting outside.
Moving your body.
Putting your phone down earlier.
Taking a proper lunch break.

Not because we’re trying to be “perfect”.
But because they genuinely help us feel more like ourselves again.

I think social media can make wellbeing look very all-or-nothing sometimes.

But most of the time?
It’s just normal people trying to make slightly better choices where they can.

Anyway… I went.
And I do feel better for it - even if this piece of torture equipment still makes me feel sick every time!!
