One of the things that excited me about the additions to the Healthy Extras was being able to make guacamole again without using loads of swips!

To be honest, I'm surprised it's taken me this long.

Using a Healthy Extra Healthy Fats option for the avocado, and half my Healthy Extra Fibre choice for the Jacobs On The Go crackers, this was a perfect late lunch!

Threw in some red cabbage instead which turned it all a pretty purple colour 💜😍

I've cooked off the 2 remaining meals for me to tuck into this week so I'm all good too go!!
