Roast chicken with LOADS of home-grown veggies… it really doesn’t get much better than that! 🥕🥔

We were chatting in one of the groups this week about courgettes and marrows, and I was saying just how good stuffed marrow is with Linda McCartney Rosemary & Red Onion sausages alongside a roast dinner. So… it had to be done today! 🤤

And pudding? Well, it would have been rude not to! 😂 Slimming World sponge pudding with yep, you guessed it… fruit from the lottie!🍎

Anyone else just give up trying to get back to sleep when you’re wide awake? 😂

That was me this morning, so I thought I may as well make the most of it and head to the lottie. Watering’s all done, I’ve picked another lovely haul, and it was all finished before 8:30! 🌱🥒🍅

Now I’m sat with a cuppa, looking around deciding which job to tackle next while I wait for Kev to get here so we can move a couple of giant slabs into place.

I do love these quiet early mornings up here… although I definitely wasn’t expecting to be this productive before most people have had breakfast! 😂

Watering done for another day! 🌱

I popped down to the lottie this morning thinking there wouldn’t be much to pick, so I didn’t bother taking the baskets. Well… I was wrong! 😂

And look at this beauty… my very first homegrown butternut squash! 😍

I’ve never grown them before, so I’m ridiculously pleased with this one. It’s an absolute whopper 🥰

Busy morning ticked off! ✅💪

Started the day topping up the fruit and veggies 🍎🥕, then it was off to the lottie with Kev for watering, weeding and shifting what felt like half a timber yard… wood and pallets everywhere! 😂🌱

By the time we got home I was starving, so lunch had to be a quick one. A bowl of pasta with a creamy courgette sauce (when you’ve got courgettes coming out of your ears, you’ve got to get creative! 🤣🥒).

And because apparently I don’t know how to stop… I’ve now got a MASSIVE tray of tomatoes, onions and garlic roasting away in the oven. 🍅🧅🧄

The only problem is… do they become soup or pasta sauce? Both? 🤔 Decisions, decisions! What would you make? 👇😋

Right then… that’s my last Slimming World Kitchen meal of the week done! 😂🍽️Today’s choice was the Speedy Chicken & Rain...

Right then… that’s my last Slimming World Kitchen meal of the week done! 😂🍽️

Today’s choice was the Speedy Chicken & Rainbow Rice Salad and yep… another winner! 🙌 It was really tasty, packed with loads of Speed Free foods and definitely one I’d have again.

I must admit, I’ve really enjoyed trying these meals this week. It’s been so nice not having the daily “What shall I have for lunch?” debate with myself! 🤣 Just grab it, cook it and tuck in!
