Debra, 60, from Derby has lost an incredible four stone in ten months – three and a half stone of that with Livewell – while managing long Covid, arthritis, the menopause, high blood pressure, high cholesterol, and borderline diabetes.

🥗Super simple Greek Salad🥗

Eating healthily does not have to be hard and this idea for from Lindsay in our Customer Contact Team means you can create a dish that packs all the Mediterranean flavours with very minimal effort! 🙌

Traditionally, Greek salad is topped with a large wedge of Feta cheese and although it provides high-quality protein and essential vitamins, it's cured in brine, which means it can be high in sodium and saturated fat. The 'shop bought' olive and feta mix means you can moderate the calories without losing any of the flavours.

Ingredients:
Tomatoes 🍅
Cucumber 🥒
Red onion🧅
Pack of olives and feta (widely available)🫒
Dried oregano 🌿

Method:
➡Cut your tomatoes into 6 depending on size, slice your cucumber and cut your onion into bite size pieces.
➡Add the prepared olives and feta along with a little of the olive oil dressing.
➡Sprinkle on some dried oregano to taste.

Best served at room temperature. It's that easy - enjoy! 🥗

Celebrating our amazing walking volunteers this National Volunteers’ Week 👏

After 10 years and more than 3,300 miles of leading Derby’s most popular Ramblers Wellbeing Walk, Mickleover couple Sandra and Andy Ward are stepping down as walk leaders.

Through weekly walks, social events and a warm welcome for everyone, they’ve created a vital lifeline for dozens of local people – helping them feel less isolated, make friends and stay active.❤️

This , Sarah from Livewell Customer Contact Team, has jumped on the bandwagon and gone retro dinner party themed for her choice of salad. One that is fit for Olympian Rupert Campbell-Black, of course ! 😉👩‍🦱 🪩

This healthy take on the classic Prawn Cocktail, swaps mayonnaise for 0 % Greek yoghurt but with no compromise on taste 🍤

Take a step back in time and enjoy a highly nutritious, low-calorie starter or light bite packed with lean protein, vitamin B12, and omega-3 fatty acids. The prawns themselves are low in fat but high in essential minerals, while the accompanying salad provides fibre😎

Serves: 2
🧑‍🍳 Prawn Cocktail Ingredients
• 150g pack cooked and peeled prawns
• 1 lemon
• 1 red pepper
• 2 tomatoes
• ½ a small cucumber
• 1 white or red onion
• Lettuce leaves of your choice

🧑‍🍳Rosemarie Sauce Ingredients
• 2 tsp of tomato puree
• a good pinch of smoked paprika
• 4 tbsp 0% fat Greek yoghurt
• a small squeeze of lemon juice
Optional: a dash of Worcestershire Sauce

🧑‍🍳Method
• Wash and pat dry 3 or 4 lettuce leaves and display them around the inside edge of a small bowl
• Finely wash and dice the salad ingredients of your choice and sprinkle on top of the leaves
• In a separate bowl, mix the Rosemarie sauce ingredients thoroughly until the taste is to your liking and fully blended. It should look pink
• Add a good handful of prawns into the sauce and stir
• Spoon your required amount on top of the lettuce and diced salad.
• Optional: Serve with a slice of wholemeal bread and ENJOY 😋

🥗🌞 Salad Week Recipe: Smoked Mackerel Pasta Salad 🌞🥗

This , our team is sharing some of their favourite dishes. Livewell Customer and Marketing Coordinator, Kellie, says this light lemon dressing makes this perfect for a healthy summer evening meal.

With the cost of smoked mackerel rising, this recipe helps make it go further for a family of four. It is:
✅ Packed with protein
✅ A good source of vitamin D
✅ Full of heart and brain‑boosting omega‑3 fatty acids
✅ Includes one of your 5 a day

Serves: 4
Approx: 560 kcals per portion

📝 You will need:

225g pasta 🍝
300g smoked peppered mackerel fillets 🐟
8 cherry tomatoes 🍅
1 red pepper 🫑
15cm cucumber 🥒
3 tbsp natural yogurt 🥄
3 tbsp light mayonnaise 🥄
Juice of 1 lemon 🍋
Optional: 1 tsp Dijon mustard (for the dressing)
Optional: ½ red onion, finely sliced 🧅
👩‍🍳 Method:
1️⃣ Cook the pasta according to the pack instructions, drain and run under cold water to cool.
2️⃣ Remove the skin from the mackerel and flake into bite‑sized pieces.
3️⃣ Halve the cucumber, remove the seeds and slice. Slice and chop the pepper, halve the tomatoes and finely slice the red onion if using.
4️⃣ Mix together the yogurt, mayonnaise and lemon juice (and mustard if using), then toss through the pasta with the mackerel, cucumber, tomatoes and red pepper.

Perfect served straight away or chilled for later – ideal for warm evenings or packed lunches. 😋🌿

Here at Livewell, we really value our fantastic volunteers who give their time, energy and enthusiasm to support our classes and walks. 💙

If you're inspired to make a difference we're currently looking for Volunteer Walk Leaders. You don’t need any previous experience, just a love of walking and a friendly approach. We provide all training and ongoing support. 🥾

Alan’s Journey to a Smoke-Free Life 🌱🚭
Marking ***coDay

For World No To***co Day, we’re celebrating Alan from Shelton Lock, who is nearly five months smoke-free after more than 50 years of smoking. 💪

As a Metropolitan Housing tenant, Alan received support from Livewell advisor Charlotte – including one-to-one advice, free ni****ne patches and a v**e. He has turned serious health scares into a powerful reason to quit for good and spend more quality time with his family and grandchildren. ❤️👨‍👩‍👧‍👦

He’s now enjoying long walks without getting breathless, a fresh-smelling home and holidays instead of ci******es – and he’s inspiring his neighbours to think about quitting too. 🚶‍♂️✨
