Did you know that it’s National Rice pudding day 😋
⭐️Slow-cooker rice pudding – 3 ways⭐️
The classic dessert is cosy and comforting... and it can be a blank canvas for creating your favourite flavour combos, as this trio of deliciously different versions shows
🍚Ingredients 🍚
⭐️175g dried pudding rice
⭐️1.3 litres skimmed milk
⭐️4 level tbsp sweetener granules
For vanilla rice pudding (4 Swips per serving):
⭐️2 vanilla pods, split in half lengthways
⭐️2 tsp vanilla extract
⭐️500g fresh blackberries (or your favourite fruit), optional
For chocolate-orange rice pudding (5½ Syns per serving):
⭐️1½ level tbsp cocoa powder
⭐️Orange segments
⭐️1 level tbsp chocolate dessert sauce
For cinnamon and apple rice pudding (4 syns per serving):
⭐️½ tsp cinnamon
⭐️½ tsp nutmeg
⭐️Chopped apple, to serve
⭐️Small mint leaves and pared lemon rind, to serve (optional)
🤩Method🤩
⭐️Rinse the rice under cold water and drain well. Tip it into your slow cooker with the milk, then stir in the sweetener. To make the vanilla rice pudding, scrape the vanilla seeds from the pod and add to the pot with the extract. To make the chocolate-orange version, stir in the cocoa powder. And to make the cinnamon and apple rice pudding, stir in the cinnamon and nutmeg.
⭐️Cook on high for 3-4 hours, or until the rice is tender. If you’re having vanilla rice pudding, stir through the blackberries (or other fruit), if using; if you’re having chocolate-orange rice pudding, top with the orange segments and dessert sauce; if you’re having cinnamon and apple rice pudding, top with the chopped apple and the mint leaves and pared lemon rind, if using.

To oven cook, preheat your oven to 150°C/fan 130°C/gas 2. Add the ingredients to a baking dish and bake for 2 hours or until the rice is tender.
