And we have sun!!!! After a week of, shall we say very Hebridean weather up in the north-west, today we have glorious sunshine. Just fresh out of a dip in Loch Oich with barely a goose bump on my arms (ok, there may be a few ) I am not moving for an hour or 2 now.. before we head slightly further south for a couple of nights. We were meant to be camping but apparently there’s some kind of a football game happening and so accommodation has gone up a notch... to one with a TV!

This is also the first time for a week we’re likely to have WiFi and signal as we were off digital grid in the glen. It was good for the soul folks... we all need to switch off the constant stimuli at times, I know I get totally overwhelmed at times and guessing it ain’t just me. Xx

Hands up if you’re short of time? Everyone, right? When we’re short of time it’s far too easy to grab a quick, convenient, and generally unhealthy snack. Having a bank of quick go-to recipes can be really helpful to avoid this and this one is ideal. Using whole grain bread makes this high fibre so great for our gut, plus it’s rich in omega 3. The sun is out, the down jackets are in the cupboard and the heating is off! Let’s hope it’s here to stay.

We all know we need water to stay alive, but we need it for far more than that – we need it to thrive.

Dehydration, even the smallest amount, can contribute to fatigue, poor concentration, constipation, headaches, and inflammation.

Nailing your water intake can be harder than it sounds so here are my Top Ten Tips staying hydrated:

1. As soon as you get up have a big glass of water. Your kidneys (and more) will appreciate it.

2. In these summer months, keep a container of water in the fridge. Make it more interesting by chopping up strawberries, oranges, or lemons and throwing some in. Or add herbs.

3. You can also make up a “batch” of herbal tea of your choice, allow it to cool, and keep it in a jug in the fridge.

4. At work, keep a bottle on your desk during the day and be aware of how much you drink. You can buy some great glass bottles with protective covers so you’re not constantly guzzling chemicals from plastic or by BPA-free bottles.

5. Drink more in the first part of the day so you’re not on the toilet all night.

6. Don’t forget that some foods contain lots of water so these can all help in keeping us hydrated. Good examples are cucumber, celery, broccoli, peppers, spinach, and melon.

7. Don’t drink lots with main meals. This can dilute stomach acid and digestive enzymes and you can end up with poorly digested food and bloating. Leave 30 mins either side.

8. Caffeine is a diuretic so too much of it will leave you dehydrated. If you have coffee, have water alongside.

9.If you find water really boring, use a small amount of fruit juice as you would diluting juice. You can gradually reduce this so that you are having far more water than juice.

10. Make yourself a smoothie with a mixture of vegetables, fruit, and water or coconut water. Coconut water is full of electrolytes, which can really help with hydration.

Doesn’t this look delicious? This recipe from the Hairy Bikers incorporates asparagus, peas, and broad beans so it’s a triple whammy on the seasonal vegetables. This recipe serves four and takes just half an hour. Risotto is a great way to use up the vegetables you’ve got lying around. Perfect for reducing food waste!

Due to the increase in imported fruit and veg, we are absolutely ruined in terms of availability, but as I'm sure we're all aware it's so important to support our local businesses and by eating seasonally we can do exactly that.

Here are some other reasons to eat seasonally:

It's cheaper. Lower costs to get it from the field to your plate!

There are fewer air miles. That’s got to be a good thing!

It tastes better. Local fruit and vegetables haven't been locked in cargo, meaning they often hold their taste and nutrients.

It's exciting as it encourages variety in your diet. We've mentioned fruit and veg boxes before and these are a fantastic way to ensure you are eating seasonally and getting a wide variety of fruit and vegetables.

PS. I’m off to eat some asparagus – British of course! It’s a short season!!

Finally, we can escape Glasgow once again!
I so hope that the rest of the summer for all of us in Scotland can see us able to do what we love, with those we love ❤️

Yesterday some friends came through from Edinburgh to swim in my local loch. (Well clearly not MY local loch but you’ll catch my drift! ) It was so unbelievably good to have a sense of normality and just to hang out in a beautiful spot, sharing some food (thanks C!) and laugh and properly catching up!

Community, nature and movement... never to be undervalued!!

At last, Summer has arrived! 🌞

Here’s a fantastic (and tasty) salad for you to make before the rain makes a return. At this time of year, it's a great salad to add to a lamb steak or throw in some tofu or toasted walnuts.

I love a tabbouleh in summer! This one's with quinoa as a gluten-free option, but of course, you could make it with bulgar wheat.

If you know me, you'll know how much I love using herbs - not just for my taste buds, but also for the nutritional bonus they add to any meal. Parsley and mint are used here...summer tastes that can make any salad, but for added value here is the nutritional lowdown:

Parsley🌱

✔ SUPER rich in Vitamin K to support our bones and blood clotting, PRETTY rich in vitamin C and magnesium, and calcium - also good for bones.

✔ Rich in carotenoids, another family of antioxidants to help protect our cells.

✔High in nitrates that dilate blood vessels for healthy blood flow

✔Helpful for our liver detox pathways.

Mint 🌱

✔Contains menthol which is a decongestant.

✔Can be helpful for IBS symptoms of gas and discomfort (but not recommended if you suffer from reflux).

✔Anti-bacterial properties

Look at these PURPLE beauties😍 (I know 2 of them are technically "red" but I've always thought red onion and cabbage are pretty purple!)

We often hear that we should eat a rainbow of foods to get a good range of vitamins and minerals. Yes! We should indeed, to ensure a nice variety of vitamins, minerals plus a whole heap of beneficial phyto (plant) compounds.

Why should we include purple? 🍇

You might have heard that blueberries are good for us, but why? One of the reasons is that they, along with other purple "stuff", is that they are jam-packed with (roll off the tongue) anthocyanins and these are...good!

✔They are potent antioxidants

✔Help protect the health of your cells

✔Provide anti-inflammatory activity

✔May interact positively with your gut bacteria

✔May support healthy cognition and protect against dementia.

A diet rich in antioxidants offers us a range of benefits, but don't forget this group as there's a ton of research into them.
