The food balance project We are an online nutrition coaching service which provides an individualised nutrition program which aims to help you reach your nutritional goals.

Welcome to THE FOOD BALANCE PROJECT. Our name says it all really! We want to share with you the positive effect that eating whole clean food can bring to your lifestyle. We will work closely with you to develop an individualised nutrition program which aims to help you reach your fitness goals and achieve a nutritional balance in your day to day life. People just want something that works and we o

ffer the means needed to do this through education, coaching, sharing our experiences and offering our support and confidence. We use two approaches to help our clients achieve their nutritional goals. One approach involves counting calories. This is more suited to our clients who have specific short term goals athletes making weight for a competition or figure competitors dropping weight for a competition for example. Our other nutritional approach and our most popular involves working with one of our coaches to develop healthy eating habits. It take 12 months to complete this program.

The food balance project helped me with my nutrition and weight cut for my most recent Muay Thai fight on I can’t recommend this service enough. This made such a difference compared to my previous fight camps. Not only did I learn about the importance of the foods I was eating. The balance project made sure I was eating enough food to maintain the high training levels while still managing to cut weight. This made all the difference during the camp. The final weight cut and rehydration process was made much simpler as I has a detailed plan laying everything out. All I had to do was follow Patrick’s instructions. - .96

ALMOND MILK

This is simple to make and loaded with goodness. A lot of store bought but milks are also pasteurized which reduces their nutritional value. Almond is ideal on cereal or as substitute for milk.

Make 1 litre

Prep time 5 minutes, plus 8-10 hours soaking time.

* 1 cup (250mL) raw almonds
* 3 cups (750mL) water
* 1 date, pitted (optional)
* Pinch of sea salt

1. Soak the almonds in a bowl of water for 8-10 hours. The longer they soak the creamier the almond milk. Drain and rinse the almonds.

2. In a blender combine the soaked almonds, 2 cups (500mL) of the water, and the date (if using). Blend on low at first, then blend on high for 1 to 2 minutes.

3. Add the remaining 1 cup (250mL) water and blend for another 20 seconds.

4. Strain the almond mixture through a fine mesh sieve into a bowl, then strain again to extracted as much liquid as possible. Discard the solids.

5. Increase sweetness to taster of desired, by adding another date. Add salt.

Benefits

* One cup of almond milk contains only 60 calories, as opposed to 146 calories in whole milk. It makes for a great substitute that will help you lose or maintain your current weight.

* Almond milk (with no additives) is low in carbs, which means it won’t significantly increase your blood sugar levels

* It doesn’t contain lactose.

* Its easy to make and it tastes good.

5 FERMENTED FOODS TO TRY

YOGURT is a great sources of probiotics. It is made from milk that has been fermented by friendly bacteria, mainly lactic acid bacteria and bifidobacteria. Plant-based yogurts, such as coconut yogurt, also contain added friendly bacteria. Unfortunately, not all yogurt contains live probiotics because they have been killed during processing. Therefore, look for yogurt with active or live cultures.

KIMCHI is a fermented, spicy Korean side dish usually with cabbage as main ingredient, but it can also be made from other vegetables. Kimchi contains the lactic acid bacteria lactobacillus kimchi and is also high in vitamin K, vitamin B2 and iron.

SAUERKRAUT is finely shredded cabbage that has been fermented by lactic acid bacteria. It is a traditional and old food very popular particularly in Europe. In addition to its probiotic qualities, sauerkraut is rich in fiber, the minerals iron and manganese and the vitamins C, B and K. Make sure to choose unpasteurized sauerkraut, because pasteurization kills the live and active bacteria.

KEFIR is a fermented probiotic milk drink. It is made by adding kefir grains to milk from cows or goats. Kefir grains are cultures of lactic acid bacteria and yeast that look a bit like a cauliflower.

TEMPEH is fermented soybean. It is normally served as a popular, high protein substitute for meat. Due to fermentation tempeh also contains vitamin B12. This makes it a great choice for vegetarians as well as anyone looking to add a nutritious probiotic to their diet

Ingredients

* ½ tsp. coconut oil
* 1 egg
* 5 egg whites
* 1 tbsp. coconut flour
* ¼ cup (30g) zucchini (courgette), grated
* herbs de provence (mixed herbs), to taste
* salt & pepper
* ⅓ cup (80ml) tomato sauce (passata)
* 2 tsp. Parmesan cheese, grated

What you need to do

1. Heat the oil in a 9-inch non-stick skillet over a medium heat.
2. In a bowl, whisk together the egg, egg whites, grated zucchini, coconut flour, herbs and season to taste with salt and pepper. Pour the egg mixture into the skillet, cover with a lid and cook gently until the eggs are set.
3. Serve immediately, topped with the tomato sauce and Parmesan cheese.
