If you want an easy β€œthrow it all on one tray” meal, this is it! πŸ™Œ Packed with colourful vegetables, protein-rich lentils, eggs and feta, it makes a delicious lunch/ dinner and tastes even better the next day.

πŸ›’ INGREDIENTS β€” 4–6 servings

πŸ₯• 2 medium sweet potatoes, peeled & cubed
πŸ₯• 3 carrots, sliced
πŸ«‘ 1 red pepper, chopped
πŸ₯’ 1 courgette, chopped
πŸ§… 1 red onion, sliced
πŸ§„ 4- 5 garlic
πŸ… 200g cherry tomatoes
🌱 200g cooked lentils, chickpeas drained
πŸ₯š 4–6 eggs
πŸ§€ 150g feta
πŸ«’ 2 tbsp extra-virgin olive oil
🌿 1 tsp dried oregano
🌢️ 1 tsp smoked paprika
🌿 ½ tsp cumin
πŸ§‚ Celtic sea salt & black pepper
🌱 Fresh parsley or basil
πŸ‹ Optional: squeeze of fresh lemon

πŸ‘©β€πŸ³ METHOD

1️⃣ Heat oven to 200Β°C fan.

2️⃣ Add the sweet potato, carrots, pepper, courgette, onion and tomatoes to a large roasting tray. Toss with olive oil, oregano, paprika, cumin, salt and pepper.

3️⃣ Roast for 25–30 minutes, turning halfway.

4️⃣ Stir through the cooked lentils and return to the oven for another 5 minutes.

5️⃣ Make 4–6 little wells and crack in the eggs. Scatter over the feta.

6️⃣ Bake for another 8–12 minutes, until the egg whites are set but the yolks are still slightly soft.

7️⃣ Finish with fresh herbs, a squeeze of lemon and a drizzle of extra-virgin olive oil. πŸŒΏπŸ‹

200g baby spinach
1 red pepper
1 courgette
150g cherry tomatoes
1 small red onion

🦠 IS YOUR FRIDGE HIDING MOULD? 🦠

We often think about mould in our homes β€” but forget about the place where our food lives!

Mould can grow inside fridges, particularly around seals, shelves, corners and spilled food. Spores can spread onto nearby surfaces and foods, while some moulds can produce mycotoxins. You cannot see the spores by the way....mould can show up in lovely different colours such as red, yellow, green and black ...and slimey pink πŸ₯΄.

Repeated or significant mould exposure may contribute to allergic symptoms, nasal irritation, coughing, wheezing and respiratory problems, particularly in sensitive individuals.

🌿 From a naturopathic perspective, reducing exposure is an important first step when supporting the body's natural detoxification and antioxidant pathways. Symptoms sometimes associated with environmental mould exposure can include brain fog and fatigue, although these are non-specific and have many possible causes.

A colourful, crunchy salad packed with fibre, healthy fats, antioxidants and vitamin C. Perfect as a side dish or light lunch!

πŸ₯— Ingredients

- 300 g broccoli florets (lightly steamed and cooled)
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 apple, diced
- 30 g pine nuts (or sunflower seeds)
- 25 g extra virgin olive oil
- 15 g apple c***r vinegar (or white balsamic vinegar)
- 1 tsp raw or manuka honey
- 1Β½ tsp mustard
- 1 tsp fine sea salt
- Β½ tsp ground black pepper

1. Steam the broccoli for 2–3 minutes, then cool under cold water or allow it to cool completely.
2. Toast the pine nuts in a dry pan until lightly golden.
3. Whisk together the olive oil, vinegar, honey, mustard, salt and pepper.
4. Combine the broccoli, red and yellow peppers, apple and pine nuts in a large bowl.
