Delicious breakfast I cobbled together from a couple of recipes from and I was excited to have my first rhubarb of the season (bit late I know!) The tangy compote brings some fruit to your breakfast and really cuts through the rich, warming porridge. The h**p seeds add protein and fibre to help balance blood sugar amongst many other benefits.

Recipe below:

Cinnamon & Cardamom Spiced Porridge with Pistachios and Rhubarb & Orange Compote

For the compote (makes 3 servings):

3 small sticks of rhubarb
Zest and juice of 1 orange
1 tbsp of maple syrup (optional)

Method:

Chop the rhubarb into 1cm pieces

Heat in a saucepan with the orange juice and zest and the maple syrup if using

Simmer until everything has softened down and come together - around 15 minutes

For the porridge (serves 1):

35g organic gluten free oats
20g shelled h**p seeds
250ml dairy free milk
10 pistachios
1 cinnamon stick
Pinch of cardamom powder

Method:
Toast the oats, h**p seeds and pistachios in a saucepan over a low heat for a minute or so then add the milk

Stir well and add the cinnamon stick and cardamom

Continue stirring occasionally for 5-10 minutes adding more milk as you go, if needed

Remove the cinnamon stick and serve with a dollop of compote and a couple of extra pistachios

Sunday smoothie bowl - a little bit sweet to have every day but delicious at the weekend! Inspired by the gorgeous breakfasts I had on my recent stay in Ibiza, this one was made with kale, banana, pineapple, coconut milk and flaxseeds with a dash of supergreen powder. Topped with chia seeds, coconut chips and frozen rasps. Very satisfying and full of goodness!! And all served in my coconut bowl. What are you having for breakfast this morning?

The sun is setting on my week's stay in Ibiza. As I sit on the plane waiting to take off I am so thankful to Healthy Mays and Scarlett for looking after us so well during the Soul Shine retreat. I am also super grateful to have met such a wonderful group of fellow retreaters (not sure if that is a real word!) I have made friends for life I am sure. We were treated to amazing, gut friendly meals prepared by , yoga three times per day, paddleboard yoga, beach time and a cacao ceremony and sound healing as well as generally enjoying each others company and laughing lots. It really reminded me how important it is to take time to reset and refresh - especially after the strange and stressful year we have all been going through! Sadly being on retreat forever is not an option right now but I'm looking forward to catching up with everyone over Zoom for virtual yoga classes. Wishing you all a happy Sunday evening!

Breakfast. The most important meal of the day? For some it is - for others not necessarily. Some might not be able to function without food first thing whilst others might not feel hungry until much later. It's important to remember that one size does not fit all when it comes to nutrition - listen to your body and do what's best for you. Whatever you choose make sure your first meal of the day contains a source of protein (eggs are great!) and maybe even some veg!! This lovely recipe is courtesy of Madeleine Shaw one of my favourite food writers - rocket, tomatoes and avocado topped with eggs, pumpkin seeds and some delicious homemade pesto. Happy Monday!
