A few more everyday wholefood plant based meal ideas for inspiration! 🌿
I tend to build most of my meals around lots of vegetables, then add a good source of protein such as lentils, beans and tofu, alongside satisfying carbohydrates such as potatoes or, sometimes, pasta, and soba noodles.
It’s a really simple way of eating, but it ticks a lot of boxes:
🥦 Plenty of different vegetables for fibre, micronutrients and plant diversity
🌱 Legumes for plant protein to support muscle maintenance and recovery
🥔 Potatoes or grains for satisfying, nutrient-rich carbohydrates and sustained energy
🍜 Soba noodles / pasta or sourdough bread when I fancy something different. 🌱Herbs, spices, nuts and seeds for flavour, texture and healthy fats
🍓 And fruit features every single day — usually several different types
I’m a big believer that healthy eating doesn’t need to mean complicated recipes or spending hours in the kitchen. Most of these meals are simply combinations of whatever vegetables I have available, cooked or raw, with protein and a satisfying carbohydrate.
The result is a big plate of food that’s filling, low calorie density, fibre-rich and genuinely enjoyable to eat - helping with energy, satiety, muscle support and getting plenty of plants into the day.
No perfect meals. No going hungry. Just lots of good food, put together simply. 🌿
