Speedy ratatouille with couscous
Packed full of veggies this easy meal is super healthy and super quick! 😋

Ingredients
Low-calorie cooking spray
2 onions, roughly chopped
1 aubergine, roughly chopped
2 large courgettes, roughly chopped
1 red and 1 yellow pepper, deseeded and roughly chopped
4 garlic cloves, finely chopped
400g can chopped tomatoes
400g passata with onions and garlic
2 tbsp balsamic vinegar
¼ tsp sweetener
Salt and freshly ground black pepper
12 pitted black olives in brine, roughly chopped
A small handful of fresh basil, to garnish
250g dried couscous, cooked according to packet instructions, to serve

Method
Place a large pan sprayed with low-calorie cooking spray over a high heat. Add the onions, aubergine, courgettes,peppers and garlic and stir-fry for 2-3 minutes.
Add the tomatoes, passata, vinegar and sweetener, season and stir. Cover tightly, turn the heat down to low and simmer for 15 minutes.
Remove the ratatouille from the heat. Divide between plates and scatter over the olives and basil. Add a twist of black pepper and serve with the couscous.

Lancashire hotpot
A succulent, slow-cooked classic for when only meat and potatoes will do. This lamb casserole recipe is a warming one-pot wonder!

Ingredients
Low calorie cooking spray
8 lamb leg steaks, all visible fat removed, cut into bite-size pieces
3 large onions, roughly chopped
4 celery sticks, roughly chopped
4 large carrots, peeled and roughly chopped
1 level tbsp plain flour
1 tbsp Worcestershire sauce
4 tbsp tomato puree
500ml lamb stock
2 bay leaves
800g potatoes, peeled and thinly sliced
A handful of fresh flat-leaf parsley, finely chopped, to garnish

Method
Preheat your oven to 160°C/140°C Fan/Gas 3. Place a large casserole dish sprayed with low calorie cooking spray over a high heat. Cook the lamb in 2 batches for 3-4 minutes each, or until browned. Transfer to a plate with a slotted spoon, cover and set aside.
Add the onions, celery and carrots to the dish and stir-fry for 3-4 minutes. Sprinkle over the flour and cook for a further 2 minutes. Add the Worcestershire sauce, tomato puree and stock, and bring to the boil.
Return the lamb to the dish, stir in the bay leaves and remove from the heat. Arrange the sliced potatoes on top of the meat and veg, cover and cook in the oven for 1½ hours, or until the potatoes and lamb are tender.
Turn up the heat to 200°C/180°C Fan/Gas 6, spray the potato slices with low calorie cooking spray and cook the hotpot for a further 10 minutes, uncovered, until golden. Garnish with the parsley and serve.

White bean shakshuka
This spicy delight is a sensational choice for breakfast, brunch, lunch or supper. We’ve added white beans to give it even more filling power!

Ingredients
2 x 400g cans chopped tomatoes with chilli and garlic
2 tsp ground cumin
3 roasted red peppers in brine from a jar, chopped or sliced
400g can cannellini beans, drained and rinsed (see tip)
8 medium eggs*
*Pregnant women, the elderly, babies and toddlers are advised to choose eggs showing the British Lion stamp if eating raw or partially cooked eggs.

Method
Put the tomatoes and cumin in a wide non-stick frying pan (choose one you can put a lid on as you'll need to cover it later) and simmer over a medium heat for 5 minutes.
Stir in the peppers and beans and simmer for 5 minutes or until they’ve heated through and the tomatoes have reduced and thickened nicely. Season lightly.
Make 8 shallow wells in the mixture with a wooden spoon. Crack an egg into each well and lightly season them all. Cover the pan and cook for 10 minutes or until the whites are firm and set and the yolks are cooked to your liking.
This is also delicious with a 60g wholemeal roll or pitta bread (Healthy Extra ‘b’ choice) to dunk in the yolks.

Beef tagliatelle
This mighty meaty dish (spag bol with a twist!) will satisfy the heartiest appetite

Ingredients
Low-calorie cooking spray
500g lean beef mince (5% fat or less)
1 large onion, finely chopped
1 medium carrot, finely chopped
1 celery stick, finely chopped
250g closed-cup mushrooms, sliced
3 large garlic cloves, crushed
150g cherry tomatoes
400g can chopped tomatoes
2 beef stock cubes, crumbled
4 tbsp tomato purée
2 tsp dried oregano
2 tsp Marmite
½ small pack fresh basil, finely chopped
80g baby spinach
400g dried tagliatelle pasta

Method
Spray a large non-stick saucepan with a little low-calorie cooking spray and place over a medium heat. Add the beef, onion, carrot, celery and mushrooms and cook for 15 minutes.
Drain off any fat in the pan and add the garlic, cherry tomatoes, chopped tomatoes, stock cubes, tomato purée, oregano, Marmite and basil, plus 400ml boiling water. Simmer for 25 minutes, then add the spinach and stir until wilted.
Meanwhile, cook the pasta according to the pack instructions and drain.
Stir the sauce into the pasta, add salt and pepper to taste and serve hot with salad.
